I found a sake I was interested in, so I bought it when I went to a liquor store in Kitasenri It has a clean but sweet taste with a light ripeness. The sweetness is quite unique and chemical-like 😅. The alcohol aftertaste is a bit strong. The aftertaste is a bit strong, like alcohol smell... It tastes a little bit hackneyed... I personally would have preferred a more mellow taste.

Miyanomatsu in Saga brews some pretty interesting nigori, which has been my favorite lately😇. I think pink nigori sake from Aizan is also interesting 🤣.

The lame-ish letters are cool. The top aroma is gorgeous, citrusy with a hint of acidity. Sweet and fruity. Pineapple type. Clear and gentle taste. It becomes sweeter and juicier if it is left in the refrigerator for a little longer than if it is freshly put out. I hope they release more of this sake in the future 🤔.

Winter Nigorinpik 47 Following yesterday's Peach Color Activated Nigori, today we had the White Junmai Activated Nigori 😀 It is made with the same yeast as the Peach Color. The white one is made with the same yeast as the peach color one, but this one is made with Association 701 yeast (No. 7) while the peach color one is made with Association red yeast 😀. It's amazing how different yeast can give sake a completely different color and taste 🤣. The peach color was more refreshing and easier to drink than the peach color, but I could not forget the sweet taste of the peach color, which had a peculiar taste.

Winter Nigorinpic 46 We call it the Winter Nigorinpic, but we have finally reached the Peach Festival 🤣. Today, we had a beautiful pink nigori sake from Honorary Ikezuki, which is called "Peach Color Activated Nigori". It is a beautiful pink nigori sake, but I was surprised to find that it has more lees than any of the sake selections I prepared... it's like a dobrok 😀. First I let the supernatant come to room temperature... it was refreshing and had acidity from the activation, like a delicious rosé wine😇 After mixing it... this is a pink white sake 😀. The alcohol content is 12 degrees and the sake level is -40, which is a pretty aggressive spec, but here too, the carbonic acidity derived from the activation tightens the overall taste 😀. It was a very impressive and tasty sake with a beautiful appearance but also a distinctive taste 😇.

Winter Nigorinpic 36 I took a little detour to clear sake, but I'm back to Nigorinpik again starting today😇. I recently discovered Miyanomatsu and I'm a little bit addicted to it 😀. The Shuwakimaseri I had a while ago was delicious, but this is Miyanomatsu's new sake made in January this year 😀. The sake level is minus than Shuwakimaseri, so it looks quite sweet, but the sourness that seems to come from the Shuwakimaseri and the firm taste of the new sake are good nuances and only moderately sweet and tasty😇. I guess Miyanomatsu will be my boom for the time being 😀.

The Lord is a 🎅🎄 I missed the timing to open it 💦. It looks like it's hung with a shwash. The guy at the store said it's a good name 😊. I was able to open the bottle easily after opening and closing it a few times. It has a flavor like apricot and sweet and tasty like peach and pear. The apricot bean curd is a flavor I remember something about but couldn't remember it, so I borrowed Aladdin's words😅. I also feel a little maltiness and riceiness. Bitter bitter taste in the second half. You did the right thing by buying it. I didn't feel the bitterness and the sweetness seemed to increase when it was closer to room temperature.

Shuwa shuwa sake (shu) does not come! Yamamoto Sake Shop in Suita City, Osaka Prefecture, has started handling new Miyanomatsu👏. I became interested in Matsuo Sake Brewery because, pardon my French, when their red yeast sake called "TO PINKS" did not develop a good color, they added a shoulder label saying, "Sorry we couldn't make it pink." and sold it as a white active nigori with a shoulder label that said, "Sorry we couldn't make it pink. I was attracted by his sincerity and aggressive attitude. Mixing the tailings and nigori. The appearance is snow white with gold. The aroma is fresh and somewhat mild. It has a light citrus nuance like that of Hassaku and a refreshing aroma like freshly cut unripe pears. There is also a hint of sweetness, like that of apricot jelly or koji amazake. There is also a strong rice aroma with a solid feel like that of rice before polishing. A shwashy stimulation bursts forth and is quickly followed by a refreshingly modest sweetness and gentle acidity that spreads with bubbles of shwash. The aroma is refreshing and complex. As it swishes pleasantly down the throat, the sweet sake-like flavor and complex bitterness fades away. It has an adult aftertaste that leaves a bitter aftertaste. This is a dangerous one. ⚠️ It is a refreshingly sweet, delicious, adult bitter nigori sake that makes you want to keep drinking it. ☺️

Hi bouken 😃. At this point, it might be a good idea to let it sit for a while to advance the secondary fermentation in the bottle and make it more explosive 🍾😁. The first day is good, but the 4th day of opening the bottle was more intoxicating as the aroma and taste became more cohesive in the schwarziness 😊🍶.

Winter Nigorinpic: 6️⃣ The last of the white lees and bubbles Christmas, we got this shwakimaseri 😀. Lord knows 🎶 is exactly what Christmas is all about 🌲. But the god on the label of this sake has nothing to do with Christmas at all 🤣. It depicts the main deity of Umemiya, one of the three major sake deities in Japan, Ookami Shrine in Nara, Matsuo Taisha Shrine in Kyoto, and Umemiya Taisha Shrine, so in that sense it has nothing to do with Christmas at all 🤣. But I'm still thinking of Shuwakimaseri 🎶😇. This sake tasted very complex🤣. I looked at the brewery's website and it said that they aged and stored it for a long time to finish it as it was quite a unique sake 😀. It's a really complex mixture of flavors, but it has a good vibe to it 😀. It tastes interesting at all temperatures, but I liked it best when it was lukewarm 😇. It tasted sweeter and grainier, reminding me of the alcohol-sweetened amazake I had at a cold winter festival with the graininess 😇.

Toyoga after a very long time I bought it with miyanomatsu 😁. It's a juicy sweet muscat type flavor with a bit of appleiness? The bitterness is quite strong in the second half. I think the acidity is also quite strong. It seems to be a small brewery in Nagano Prefecture.

I've been curious about this brand for a while because of the rave reviews from people in Kyushu. A liquor store in Osaka started carrying it, so I bought it right away! I've been curious about this brand for a long time, and I've heard a lot of people in Kyushu rave about it, so I bought some right away. It is said to be a one year aged sake with flat polished rice and milling ratio of 70%. It has a firm and gentle sweetness with almost no sense of maturity. The second half of the bottle is a bit spicy. There is also a sense of gas or freshness. The higher the temperature, the stronger the alcohol taste becomes. I'm told that they will start handling it in earnest after the new year, and I'm suddenly curious about the other specs 🤔. The lemon squash-like sweetness comes out on the third day and it's delicious 😋.

Yesterday I finally opened a bottle of Senkyu's UA Momiji, so today I'm opening this Ginkgo 😀. I actually bought this sake at Yamamoto Sake Shop nearby, which I recently started visiting 😀. I asked the shopkeeper if he had any recommendations for my wife who likes nigori (a sweet, tasty, clear, fruity sake), and he recommended this nigori from Jyukyu-san. It was my first time to try Jyuukusan, but it was exactly what I had told the owner about Kaorin's favorite sake. I think this store is going to be one of my favorites from now on too 😀.

The other day I heard the news that a liquor store near our house has started handling a new sake that has been the talk of the town in the Kansai sakéwai world😇. In particular. Aladdin-san was very enthusiastic about it, so I decided that I had to go to this liquor store because it was close to our house 😀 I visited this liquor store with Kaorin for the first time. I was surprised to know that there was such a liquor store nearby, but what surprised me even more was that everyone in Kansai Sake-no-Wa knew of such a store 😇. It was my first time to try Miyanomatsu sake, and it was a very tasty sake with a strong flavor 😀. It went well with the mushroom and pork nabe we had today 😀. I was also surprised that they were kind enough to let me take a picture of them even though it was my first time visiting the store 😇. Kaze no Mori's selection of sake was also very attractive, and I now have another favorite liquor store 😀.

Sake purchased when Nemuchi and I went to a liquor store in Kitasenri. I think we both bought the same sake. According to the liquor store's website, it is an unfiltered, unpasteurized sake. It has a rummy atmosphere and a unique sweetness that I have never had before. It has a grapefruit-like taste, too. There is also quite a bit of acidity. I would like to try many other Abu-no-Tsuru sakes. Maybe it is better after the second day than freshly opened?

It is juicy and fruity, but not too sweet and easy to drink. It is easy to drink, but there is a bit of spiciness and a touch of alcohol in the latter half of the bottle. It has a high alcohol content, so be careful not to drink too much. It tastes better after a few days than freshly opened.

Tatsusen is a first. The rice called "Kyo no Hana No.1" is also new to me. The name alone might make you think it is Kyoto rice😅. It seems to be a phantom rice revived by the Tatsusen brewery. It was sold out on the website, but in the store it was a last one. What does it mean that the sake can be distributed at room temperature even though it is labeled "Nama-shu"? Is it possible that only the nigori portion is raw and the sake itself is fire-aged? I saw the description "nama sake" so I'll tag it as nama sake for now. It tastes like a rich strawberry au lait. It has a fizzy taste, but it is weak. I have the impression that it fades out at the end with a strong alcohol taste, which may be due to the fact that it is hydrogenated.

It is said to be the world's first sake using watermelon koji and watermelon yeast. It is refreshing, slightly sweet and spicy. It has a slight watermelon flavor. I wonder if it would be a little sweeter if it were made with rice other than Tamakae rice. It has a little more muscat flavor than watermelon. Kaze no Mori is available at only two stores nationwide. The specs are Junmai Daiginjo. The rice used for the brewing may change depending on the year. It has a strong minerality. The aroma is a bit like rummy. Kaze no Mori has a dry, clean taste. This is the first time for me to drink such a polished Kaze no Mori.

Probably the last time up for home drinking in the year. I'm going to drink outside in the evening after this. This is the one I opened yesterday and forgot to post. It's been a while since I've had it. It's been 2 years since the first release. The label and the bottle are different from before, but this one is really cool. It has a gorgeous but calm ginjo aroma, and the mouthfeel is calm and refreshing. It has a peachy taste. The previous Shiboritate had a gassy feel, but this one doesn't. I like the episodes surrounding the name of Kuzo. The regular Junmai Daiginjo Yamadanishiki, Omachi, and Aizan, which are not Shiboritate, might have been better. It used to be only Junmai Ginjo with Omachi and Yamadanishiki, but they renewed it as Junmai Daiginjo and the Junmai Ginjo is now only Yamadanishiki. Kuzo is my parents' favorite sake, and I've known it for a long time and am familiar with it.
