KPersonally, this is my third S Kaze no Mori, and so far it is the closest to the usual Kaze no Mori in terms of flavor (banana and melon-like), or perhaps it has the same flavor as the usual Kaze no Mori.
However, it's still refreshing with zero low-pasteurization feeling.
I guess it's hard to feel the intention of this sake for the third glass...

However, this is also a sweet and juicy type of wine.
The sweetness and umami spread quickly and disappear beautifully.
I don't think it has the strength and heaviness of Omachi, but personally, I'm fine with that...

This is also sweet and juicy! It's a bit sweeter than the yellow, but not as sweet as the yellow.

Bitter, more mature than Mimuro Cedar, with a rummy taste.
The alcohol taste is in line with the alcohol content.
It has a strong sweetness and less acidity and umami than Mimuro Sugi, so it is more noticeable as a Ramune (acidity > umami).
The mouthfeel is smooth and the aftertaste is smooth.
Hatsuyamori, Higashimurayama, you're good!

There is almost no fizz, but it is refreshing like a rumney from start to finish!
The lightness of the wine, which goes in and goes out quickly, is accompanied by a certain Mimuro cedar flavor.
The sweet and sour taste is also pleasant.

This is my favorite summer sake so far!

Even when well chilled, it has a very beautiful sweet and juicy flavor.
The flavor is similar to that of Kaze no Mori ALPHA6.
However, the acidity is also gentle and beautiful in the form of a cohesive flavor.
There is no so-called "matured" feeling.
I'm sorry I thought it was just like this, Shinsei. This is delicious!

The richness and body on the back end is something I have never felt before, and I can't describe it. If you try to feel the beer-like character, you can feel it, but when the temperature range goes up, it is quite sake-like!

Prose
A craft beer brewed in collaboration with Nara Brewery, "UNDERWATER" brewed with Kaze no Mori brewing water and No. 7 yeast, and a beer to be drunk at the same time.
From the first sip, or rather from the aroma, this one has a considerable sake-like quality. Is this the power of the yeast? Is it the power of water?
The aroma is a world unknown in craft beer so far!
The sourness and umami at the entrance give a sense of Kaze no Mori. There is also a maltiness in the aftertaste, which is interesting. Drinkability reminiscent of lager beer.
I have been into craft beers recently, and I realized the power of hops is great!
