A new generation of locally brewed sake that is distinctly different from the main brand "Kuromatsusenjo" and pursues an un-Shinshu-like style using Shinshu ingredients. It is designed, brewed, and stored with the aim of clearly expressing the differences between each product while pursuing a clean balance of five tastes: a sparkling sweetness, a refreshing acidity in the background, and a bitterness that finishes the palate. しんしんSYThis is the regular version Yonetsuru Junmai Dry Shiboritate Nama that we had at this store the year before last.
This is a fresh new sake, but I drank the nigori in one small glass, and this one lightly in one small glass.
They are so different that they should not be compared 🍶.

This is a "Shiboritate" sake made from "Dewa Sanba" and "Dewa Kirari" sake rice harvested in the fall and grown by local sake rice farmers in Takahata-machi, Yonesuru's hometown. Modified Nobukou is the sake rice used for our seasonal product Turquoise Blue for several years now. Like Yamamoto, the brewery's owner, it is characterized by a combination of robustness and a delicacy that no one knows. For this project, we brewed the sake in a single shot for the shipment to provide a fresh and refreshing sake that is typical of Yamamoto. all five breweries use the same sake rice, but the same Akita yeast No. 12 as our signature product Pure Black, so you can enjoy the friendly competition with the five members of NEXT 5 over the past 12 years. All of the finest Yamada-Nishiki grown for Chivalry is used. This Junmai Harazake allows you to enjoy the distinct flavor with a clear outline that is typical of Gichi-no-shu. It is not a fruity sake! It is what is called a classic sake. However, its refined flavor is distinctly different from ordinary sake. It is either white or black, with a well-defined umami and acidity that gives it a very pleasant Junmai sake flavor. Although the taste is generally maniacal, there are many repeat customers, and this brand has been supported for a long time.
