Y.Tokushige
Kuchiman's standard sake. It has a clear, clear sake quality and is slightly acidic and light. It is similar to Kubota's Senju. It has a little more umami and sweetness than Kubota. However, this is not my favorite type of sake.
Sake rice: Aizu rice (Gohyakumangoku, Yumenokou, Himenomochi)
Rice polishing ratio: 55
Alcohol content→15%.
Yeast→Utsukushima dream yeast
