mikami, which we visited last week as well. The master, who is from Hirosaki, brings out "Takekimimi" every year, so we come here to enjoy drinking it.
I think it has a strong sourness and a tangy taste for a pre-dawn drink, but it's just delicious. So this is the kind of pre-dawn drink they serve. It's good. It's a very good sake. ぎゃばん☆☆☆☆☆
Malic acid high producing yeast. I'm not sure but I think it's a sour type? But it's low al and less sour. It's not very drinkable, but I think it's something that will catch on. ぎゃばん☆☆☆☆☆
The aroma is a little alcoholic, but it's nice and refreshing. Good as a food wine.

I don't dislike this kind of sake, though there are more and more of them lately. The low alcohol content makes it easy to drink.
It's a little too refreshing, so I want something heavier with a stronger Yamahai flavor! It is a sake that makes me think, "I want a heavier sake with a stronger Yamahai flavor! Maybe it's just me? ぎゃばん☆☆☆☆☆

Something a little expensive, Hidakami.
When you put it in your mouth, you feel a sourness? It seems to disappear quickly after that, leaving behind some umami.

Sour and refreshing. The aftertaste is complex with a slight bitterness and a slight sweetness.

Shinshu Jizake Hanpukai 2023
Sweet and fruity. I have the impression that it has more umami than the muscat-like sake I had before.
It is a sweet and delicious sake that is as good as Shinshu Kamerei. ぎゃばん☆☆☆☆☆
The menu said Miyamanishiki, but what came out was Yamae Nishiki. I felt like I got something for my money.
It used to be common to drink Shinshu Kamerei at bars in Matsumoto, but it is becoming rare these days, so I have to drink it when I can.
It is said to be sweet, fresh and fruity. Sake made with Yamae-Nishiki never misses the mark, and Shinshu Kamerei is, of course, the jackpot.

No cloying taste, too clean and refreshing. Slightly acidic.
I have the impression that Miyama has a strong acidity, and this has more acidity than sweetness, but the taste is just too clear, too clear.
I had the impression that Tatenogawa was a bit more flavorful, easy to drink, but also drinkable, but this is really water.

Green Sun
Refreshing and sharp, as the label says. However, there is not much muscateliness. The crisp impression that is typical of Hiroshima is tempered but the sweetness is just a little in the aftertaste. I think it's a high level of cleanly put together with some miscellaneous flavors or bitterness. ぎゃばん☆☆☆☆☆
It tastes rather bland. It's refreshing and delicious as a food sake. I think it could be a little more assertive, but it's an impressive sake that you can keep drinking as many glasses as you want. You can finish it in one gulp. ぎゃばん☆☆☆☆☆
Much? It's been a while since I've had hana-yosu. I had a sweet image of Hana-yosu, but it's quite crisp and has a bit of bitterness. The sweetness leaves later on, but it changed my image of it.

The appetizer was Toyokko. It was a crisp, dry sake that could be drunk all year round, not just as a summer sake. Well, it was just a sip, so it might be a bit more summery.
