Sourness and sweetness with a slight bitterness.
It seems sweeter than some of the Yokoyama I've been drinking lately, but the bitterness is a nice accent to give a sense of balance.

Oh, it has a sake-like smell of sake, but the rich flavor arrives gently, yummy!
I don't drink a lot of Nanasho, but I have the impression that there are a lot of "modern" ones out there these days.
I think this one is somewhere in between.
The aroma is a little tangy but gorgeous, the mouthfeel is old-fashioned, and the aftertaste is delicious, leaving a slightly sweet aftertaste that goes away nicely. ぎゃばん☆☆☆☆☆
Did I ever drink this Daishinshu?
It has a light cloudy color.
Compared to the sweet fruity taste of recent Daishinshu, it seems to be a little more sour and refreshing.
However, the aroma is sweet and the aftertaste is also sweet, so maybe the freshness makes it seem more refreshing?
Or, if you keep drinking it, you will get closer to the taste that is typical of Daishinshu these days.

Maybe it's not the usual Tasake Tokusyu Jun? It's yamahai.
Not much of a yamahai-like acidity or something? Is it different from right after opening the bottle because it's just about to end?
While the umami taste is well felt, there is a little bit of astringency mixed in.
The aftertaste is unexpectedly short and fades away quickly.
Since we have been drinking a lot of sweet sake, this is relatively suited for eating.

I remember that this was the dangerous one with the high alcohol content.
I didn't pay attention to it before, but the rice used for sake is Gohyakumangoku.
I didn't know that the sake rice is "Gohyakumangoku", but now I know it has this sweetness.

The wine place I wanted to go to was fully booked.
I wandered around and went into a few other places, but they all turned me down.
After about 30-40 minutes of walking around, I managed to get into the second place I was planning to come 😫.
And then, Huayangyu!
The fruity taste is typical of Miyamanishiki, the acidity of Miyamanishiki, and the lingering aftertaste is beautifully balanced and delicious!

Sweet and fruity with a strong rice flavor.
Despite its mild sweetness, it is delicious and easy to drink without being sticky!

Shinshu hanpukai
Takaten does this kind of thing too 😯.
Sour aroma. When you drink it, the acidity is still there and the flavor comes through with a slightly old sake feel.
And complex sweetness in the back...
For better or worse, it is not like Takaten.
I feel a sense of relief to know that Takaten has the potential to make a modern sake if they want to, but I also feel conflicted because I want Takaten to be as rugged as Takaten is.

Suwa sake is not Masumi, Mikotsuru, Honkin, Kamito (Toyoka), Maihime, Yokobue, or Reijin, but Takaten (Shodaiyakiku...)
I want to say it strongly.

I drank Kank Kank Kangen Ume before, was it a Shirokuma? I'm wondering if this is the route they're taking here?
It was the last sip, so it might not be the same as right after the bottle was opened, but it's a rare type where the sourness increases later on.
It seems clear and refreshing, but not too sweet.
At any rate, it's delicious, though it doesn't go well with the karazumi daikon! ぎゃばん☆☆☆☆☆
Gentle sense of maturity, just like the aroma.
I think this type of Yamada-Nishiki is rare.
If it's Yamadanishiki, why don't you want to make a more straightforward, sweet and umami spreading, royal style?
