The last Houou Mita was very good. So I have high expectations for Houou Mita. They use rice from Tochigi prefecture, Yumesasara, and it is said to be Nikko. Hououmida has a nice aroma! Nice aroma of ginjo aroma. I thought it might be a little more habitual than the last time, but I didn't mind once the temperature went up. Cold is just right. It is good at room temperature! The sweetness of the rice makes it go well with strong flavored meals. It is interesting because the taste changes depending on the rice.

I haven't had otters in a long time. It is definitely delicious. And polished to 30% and 90%. Luxury! It's been a long time since I've had this, but it has a surprisingly Japanese sake feel to it. I wonder if it is the spiciness that makes it so refreshing. I wonder what makes Otters so easy to drink. At Craft Sake Week. I drink my favorite sake! It's actually been a while since I've had a chance to say I like it. And Akita Sake Komachi, nice to meet you. It has a strong acidity and is refreshing. But it is easy to drink and I can enjoy it without any snacks. I always feel that Tasake is refreshing like cold water. And it has a nice aroma. The brewery staff was funny in their bicycle uniforms. At an izakaya that I often visit. Seasonal sake is a treasure trove of encounters.... It was a brand new to me. I was caught by the sound of "unfiltered raw sake". I don't think it has much aroma. It has a clean but complex taste with a good sake. Nama-hashiroshi" gives the impression of being a strong sake, but this one is refreshing. It is delicious. It goes well with simmered bonito.

Happy New Year! I look forward to drinking healthy and delicious sake again this year. On New Year's Day, my father gave me a bottle of his favorite! A bottle of Jyushiyo! I got a small batch of it the year before last, and it was really delicious. I am looking forward to it! It's light and watery, but has the umami that is typical of sake, with a sour aftertaste that is not at all unpleasant. It's really good. It's fresh, but not too tangy. It has a great balance and clean taste. It has a complex sweetness and spiciness, deep flavor, and yet it's straightforwardly delicious. I'd drink this in a heartbeat! But I thought it was light in alcohol, so I got carried away and got drunk. 14 degrees, so it's not light. Pair it with chicken and sushi. It is 100% Yamada-Nishiki. Yamada-Nishiki is delicious. And the flavor is good due to the orikarami. It is said that the bubbles are made by yeast in the second fermentation in the bottle, the technique of Junmai Daiginjo. I received an eel as part of my hometown tax payment, and since it is a special treat, I thought I would like to serve it with sake. However, I heard that broiled eel does not go well with sake. Usually, people drink shiroyaki (broiled eel) or kanzoku (liver soup) as a side dish, and then eat the eel with rice to top it off. I did not know that. So I did some research and prepared a sake that goes well with eel. This time, it was a Junmai Namaishige sake from Daishichi. It was served cold, not too cold, because it seemed to be good at a higher temperature. This was the first sake in a long time that was truly sake! I thought it might be a little sour and not my favorite, but as I kept drinking it, it was not so bad, and as it reached room temperature, it became rounder and tastier. It was a little hot for the season, but I tried it lukewarm and it was also delicious. It easily drained off the fat from the eel and had a flavor that was as good as the eel. I am sure it would be delicious in winter if it were heated and served with oden. I used to like crisp sake, but this kind of sake is also delicious. It went perfectly with the eel.

It is a great taste for the price. Good cosmetics. You can drink it with peace of mind. It tastes good even when the temperature rises. What a strange sake. It's a little lacking as a sake, but it's a sake that people don't hate. It's more like an honor student. Some people don't like the unique taste of sake, but I don't think there is much of it. I would like to try other types of Kaze no Mori.

Today we are drinking at home with sea bream sashimi bought at the fence. I finally drank sake that my father sent me at the beginning of the year. It has a mild taste and goes well with sashimi.
