In the mouth, a small scale, clear, powdered sugar-like sweetness and rich umami spreads. Almost no acidity is felt.
As you swallow, bitterness slowly appears from the back and rises, intertwined with the sweet umami.
The lingering sweetness, bitterness, and alcohol stimulation give the sake a distinctly Japanese flavor!
The assertiveness is not too strong, but the exquisite balance complements the meal.
The umami of the Omachi rice is also present and gives an excellent impression.
It is delicious!
