This sake is a collaboration with Sakaya Kurihara in Naruse.
The aroma is subdued and cozy, but has the fruitiness of pears and peaches, and the moist sweetness of wasanbon.
In the mouth, a firm marshmallow-like sweetness spreads on a smaller scale.
Slightly melon-like as well.
As it is swallowed, the pungent bitterness derived from the alsobe rises in a rush.
The lingering finish is a complex combination of sweet, spicy acidity and strong bitterness!
Overall, it is sweetness-driven. The sweet bitterness asserts itself in the second half while the acidity is intertwined.
Personally, I got the impression that the sweetness was somewhat persistent and the alsobeymented miscellaneous tastes were stronger.
