The sweet astringency of grapes, the umami of rice, a little bit of sake, and bitter acidity give it a complex taste. A daiginjo that is very drinkable.
My favorite new sake from Izumibashi. The sweet umami of fresh melon spreads in the mouth and finishes with bitterness and acidity for a nice crisp finish. It is easy to drink and delicious.
