Takeba's pure rice sake with raw yeast, made entirely from ingredients grown in Noto.
The yeast is extracted from Noto's seaweed.

As an aside, a friend of mine who lives in Kanazawa, with whom I shared a drink later, also said "Takeha is delicious," so it seems that Takeha is loved by the locals as well.
There are many different types of ogara-mi, but this Atago no Matsumatsu no Ogara-mi, as the name suggests, is a beautiful cup with beautifully dancing tailings in the boar's mouth!

It has an elegant grain-like aroma when left at room temperature for a while.
In the mouth, it has a sourness, but a richness like amazake (sweet sake) spreads later, and finally it settles into a crisp mouthfeel.
Although it has a sake meter of -2.1, it has a sharpness that makes it perfect for an after-dinner drink.
It is apparently the store's original version of Haginotsuru, with a label that reads, "We aimed to create a sake that is like fine everyday wear.
This was the first time I learned about Hagi no Tsuru's brewing concept of "like everyday clothes," but when I drank it, I found it to be very mild and smooth, with no peculiarities, and the flavor of the rice could be felt only in the mouthfeel!

I chilled it in the hotel refrigerator and had a glass of chilled sake.

It has a refreshing taste that is not typical of sake, followed by a full-bodied sweetness and sharpness.

Nice to meet you! I visited this warehouse on a trip to commemorate my 20 years of service during my working years. We took the Akechi Railway. It had a rich aroma and full flavor. It is one of my favorite brands.

The castle town of Iwamura has a nice atmosphere. I love this sake too.

Atago no matsuri and grilled beef tail.
Meat goes surprisingly well with sake. And then there is this Atago no Matsumatsu.
Even though it is a honjozo sake, it has a mellowness that cannot be underestimated, and a refreshing sensation that lives up to its name of "sharp and dry".
It is so tasty that the fat from the beef tail is washed away.
It was a perfect match.
