Mizuori MIORI Junmai Ginjo from Fukui Yahei Shoten, which came out of a sake gacha at a shopping mall. To be honest, it is not a bonanza. The aroma and taste are not assertive, neither good nor bad, but mild. The aftertaste is clean and free of clutter. As a sake mess, it is a bit of a letdown, But as an everyday sake, it is passable. During a trip to Otaru, I tasted it during a visit to Tanaka Sake Brewery. I immediately decided that this was the one I had to bring home. It is so easy to drink that it is hard to believe that it is 17 degrees Celsius, The rice flavor is strong, but the aftertaste is light and fluffy. There is no "pressure of high alcohol", but rather elegant and smooth (-ᴗ-)✨. Not only for the tension of the trip, but also after returning home.

While visiting the Inner Shrine of Ise Jingu, we stopped by Oharaimachi and came across Iseman "Okagesama Shiboritate Unpasteurized Sake". After tasting the sake at the Imadaiji Sake Brewery tour, I had no choice but to take it home with me! I bought a bottle of Junmai Daiginjo Autumn Agari. When I poured it into a glass, its aroma, reminiscent of fruits and flowers, spread out softly and made me think, "Oh, this is going to be a good evening drink today. The sweetness is moderately subdued, and the core aroma, which is typical of rice, follows afterwards. When you put it in your mouth, you first taste a soft sweetness. The rounded umami gradually spreads from there, and you can clearly see the corners have been removed by the power of maturation over the summer. It is refreshingly sharp when cooled, and moist and deep at room temperature...in other words, it is a "two-faced" sake. It has a light sharpness that does not make you tired of drinking, and it is a bottle that goes well with autumn dining and nature. When paired with grilled saury or persimmon salad, it is a match that will make you say, "Ah, I'm so glad I'm Japanese. I fell in love with this bottle after tasting it at a sake brewery and found myself holding it in my hand. It has a dangerous charm that makes you want to have another glass...or rather, another bottle 🤣 when you drink it on a long autumn evening.

Sake from Abashiri, Hokkaido Kimi ga Sode Furu Ryuhyo Roman" is a junmai ginjo-shu made by Kinpitsu Shuzo using Abashiri's brewing water. The story of the revival of the brewery's brand name, which was discontinued in the Showa period (1926-1989), at the request of the local community, is the first thing that strikes a chord.  In the mouth, the first thing you notice is the outline of sweetness that quietly rises along with a clear, watery coolness. The sweetness is not sticky, and the taste of rice is firm.  Then, a moderate acidity and crispness follow, settling easily without dragging on the aftertaste.  The background of its revival by the local brewery club and sake store owners as a retro-retro brand using the famous water from Katsura-machi, Abashiri City, makes it stand out as a bottle of sake. It is one of those "sake you'll be glad you got", including the difficulty of obtaining it, which is limited to the local market.

Takaraiya Omachi Junmai Ginjo Namahashime is brewed with Omachi sake produced in Okayama Prefecture. It has the full-bodied flavor and softness of Omachi, and the individuality of the rice is beautifully brought out in this bottle. The aroma is gentle and calm, and in the mouth, the fresh fruity acidity and firm rice sweetness spread out in layers. While the taste is structured, the acidity, typical of a sake brewed using the traditional sake yeast, brings it all together nicely, making it a very drinkable yet well-balanced sake. I happened to come across a bottle made with Omachi at the department store "Tokiwa" in Oita and was able to pick it up.
