We compared the drinks. On the first day, the raw one has a strong alcohol taste and aroma. The fire-aged one has a dry taste with a slight sweetness. The fire-aged one is definitely tastier. After 4 or 5 days, the alcohol taste of the raw wine has calmed down and it has become more rounded. The sweetness and umami taste is very strong. It is not bitter, but has a nice sharpness. This is delicious. I wonder if the horns fall off when exposed to air. There are types of sake that deteriorate quickly, which is interesting.

Finally obtained a bottle of Jyushiyo. Half of it was shared with my parents. It is much sweeter than I expected. It is more like sugar sweetness than pineapple sweetness. It is not chemical sweetness of this kind. It tastes good, but I expect too much because of the difficulty of obtaining it.

This is my first Daiginjo from Akabu. The aroma is very nice. When you drink it, the sweetness is as strong as the aroma, but it is gentle on the palate. It is like a Japanese pear or a loquat. When you swallow it, it finishes nicely. It is very tasty and easy to drink, but it is expensive, so I will drink it little by little.

I went to Nagoya the other day, but neither Gikyo nor Kuheiji were available at the izakaya...maybe I went to the wrong store. After returning home, I found it at my usual store and bought it immediately. It has a slight hint of tailing, and when you drink it, you can feel a little volume and lactic acidity. It also has a hint of sweetness. It has a gentle bitterness, and it finishes crisp and clean. It is a very tasty sake that you can drink as much as you want.

This is a sake from the Tasake brewery. First purchase. Not much appeal in stores and not well known? I had no idea what it was like, but I bought it to give it a try. What do you think? The aroma is modest, but when you taste it, it has a beautiful sweetness, and that sweetness is clean, light, and sharp. It is very tasty! This 720 ml bottle costs only about 1,400 yen. It is the best! The alcohol content is low these days, but even at 16%, it tastes like you could easily drink it!

Sawaya Matsumoto, I like this brewery even though they have been through a lot. I compared a junmai sake and a Morihate Gohyakumangoku. Neither of them are listed, but the Junmai is Gohyakumangoku. The Junmai sake is made from Gohyakumangoku, and the Moribawari sake is made from 65% polished rice, so the specs are the same. The specifications are the same. How do you think it will taste? ...The moment I poured it, it was different. The Moriborai has a fizzy, bubbly taste. The Junmai tastes robust. Morichiri is refreshing and rich in flavor. The price of 720ml is only a little more than 100 yen, so I thought I would choose Moribari. But when I warmed it up, I found the Junmai to be better! The Moriboshi has too much acidity. I didn't realize how much difference there is in the sake making process. I guess you can't tell a lot about a sake just from its label. By the way, when I try a new sake, I trust the pop-ups at the liquor store and give it a try (^^)

It's been a long time since I bought this product, maybe 2 years. It is a regular product, Pure Black. I drank it. It is delicious! Slightly sweet without any cloying taste, with a nice sharpness. I guess some people may feel it's not enough, but I don't think anyone will dislike it. It is also easy to handle since this is a product that was left at room temperature and drank cold. I became a sake lover from Tohoku sake, so it's good!

Since it was my day off, I opened a bottle of tangerine that I won in a raffle. Since it was a special occasion, we compared three different sake cups. The taste is refreshing and sweet like a pear. The wine glass gives a more acidic taste, while the ceramic glass gives a sweeter taste and a gentler mouthfeel. Also, the wine glass kept the temperature cooler. Either way, it was delicious in this hot season.

This is a junmai sake from Katsucoma. This is my first time to drink sake from Toyama Prefecture. It is a junmai sake, but the label says it is 50% polished rice! It is a Daiginjo polish. I am not sure why it is labeled Junmai-shu. It's hard to understand... The rice seems to be Gohyakumangoku. Aside from that, the aroma is sweet. When you drink it, you can feel the sweetness gradually while it is clean, and it finishes with a slight bitterness and a nice sharpness. Overall, it is a beautiful sake, but it also has a fullness to it. It is delicious.

I bought it for the first time. Comet seems to be a rice from Hokkaido. It's flashy for a rice wine! The red bottle is fine, but the label needs a little more work... When you drink it, it has a mild sweetness for a Tasake ginjo. Gradually, it has a bitter taste like grapefruit peel, acidity, and a nice sharpness at the end. I've been drinking a lot of draft sake lately, and I'm getting tired of heavy sake, but this refreshing sweetness is just right for the hot season. It is just right for the hot season ^_^. To be honest, I didn't expect much taste, but it is delicious without any complaints.

Today seems to be Shinsei day. When I compared colors drinking before, I couldn't tell the difference at all. The aroma has a characteristic wooden barrel feel. When you drink it, it's sweet! (I don't remember it being this sweet before (for Shinsei). In the aftertaste, the sourness prevails, but the sweetness feels fresh! Is this a characteristic of the improved Shinsei as it says on the label? Or is this the trend in sake production this year?

I had never had this brand before, but I bought it after seeing the pop-up in the store. When opened, it has a slight gassy feeling. When you drink it, it has a beautiful grape-like flavor with a good amount of sweetness. It has a beautiful taste like grapes. Although it is a draft sake, it is not heavy, and I like it very much! This is my new favorite Akabu. I have never had this one, but I bought it by the square. It has a sweet aroma when you pour it. The taste is also voluptuous and sweet. It is not sticky, probably because of the acidity. There is a bit of bitterness in the back. It is very beautiful. There is a lingering sweetness in the aftertaste. It is my favorite flavor.

It is a 180ml aluminum can. It is from a good series called "Polishing 45". Daiginjo in this kind of can is rare. The can does not look like sake, so it is good that people do not mind if you drink it outside. The price of 850 yen without tax is reasonable if you consider drinking it outside. The taste is also very tasty, with a gentle sweetness and no cloying taste, but it is a little too refreshing.

Sweet apple flavor with a hint of acidity. The aftertaste is not sticky but has a nice kick to it. It is 14 degrees, so if you are careless and drink too much, you will get drunk. 2,700 yen for 500ml without tax is quite expensive, but it is delicious!

This is the first time I bought Yamahai rice wine. Well, what do you think? When you drink it, you feel a slight sweetness. After a while, it has a strong umami flavor like a layer of rice cake. It has a nice sharpness, and the cup goes on and on. It seems to be good warmed up, but it's a four-pack bottle, so I'm afraid it will run out soon.

It is described as "lightly cloudy," but it is quite cloudy. It also has a strong fizzy feeling. It is a bit fizzy in the mouth. When you drink it, it has a citrusy sweetness. After that, there is a thick feeling of ori, but when you drink it, it has a nice sharp taste. It is a draft sake, but it is not heavy (^_^) Unfortunately, I can't tell the sense of namaishuku (in any sake I drink). There are many brands of the same brand of nama and hi-ire, so I would like to drink the same brand of fast brewing and nama yeast.

It has been a long time since I drank it. The image I had was of a sake with a koge feeling, but what do you think? The aroma is slightly sweet. When you drink it, it feels light and smooth. There are no unpleasant parts at all, and the sweetness is moderate, making it easy to drink. There is no impact, but it is a beautiful, honey-like sake. There is no koge feeling at all, which I felt (or thought I felt) before. Maybe it was a different sake!

It's a New Year's Day shipment from Shinsei. The old characters and the Japanese pattern are very cool. I saw somewhere that it was inspired by the Ainu people, but not knowing anything about Ainu, it looks like a ninja to me...but I like the label because it is austere. I bought it about 1/14 of a bottle and drank it after a while. When I opened the glass, there were lots of fine bubbles. When you drink it, it has a refreshing feeling like the peel of a grapefruit, not too sweet, and it finishes clean. The acidity stands up. It is a little different from my favorite sake, but it was delicious.
