Now that I was able to get some Yamahai, I compared them. The normal Tokujun has been available for about 9 days, so the conditions are quite different... The Yamahai is stronger in both sweetness and umami, while the regular is lighter. Nama was good, but Yamahai is easier to handle! I can feel the aromatic richness in the refreshing taste.
