This is Masumi Junmai Ginjo Arabashiri Nama Genshu. It has a sour taste and a somewhat soft texture, and even though it's raw, it's a sake with a sense of power and boldness rather than youthfulness. It has such a mellow taste even when it's so cold - I learned something again.

It's Instrument Masamune 2021Session3 Special Junmai-shu. The name is difficult, but the taste is rather complex. It says it's for aperitifs, but we enjoyed it as an aperitif. The fruity taste is probably apple based, and it's still going strong no matter how many glasses I drink~ I thought, but it's 13 degrees alcohol. I see. It was a sake that was light, but had a decent amount of flavor and fruity taste. I can drink a lot of it!

This is Toyo Bijin Junmai Daiginjo.　It's been a long time since I've had this kind of sake... So it's extremely fruity, and it's also kind of gorgeous. I don't know what kind of fruit it is, but it has an elegant fruit aroma. When you drink it, it has a dry taste with a mild acidity. It is indeed a popular sake!

This is Kido Junmai. This is my personal standard sake! A refreshing dry sake with an apple aroma. It has the best cost performance. This time, I bought a one-cup bottle to compare with Toyopai. Both of them have apple aroma.... Kido is a little more sour and green apple type...?

This is Atago no Matsu Hitonatsu no Koi Junmai Ginjo. It's made from Hitomebore, a type of edible rice...hence the name Hitonatsu no Koi. It was refreshing, with a light sweetness, moderate acidity, and a clean, crisp taste. Since it was only one cup, it was not enough...

This is Hida Hourai Junmai Ginjo.　It is a sake from Hida. It is made from a small amount of rice called Hidahomare, and is served in the first class of airlines. However, compared to other Hida sake, it is very light, dry, and soft. I don't know if this is the taste of Hidahomare at all.

This is Hida Sansui Kosake. It's been a long time since I've had old sake, and I'm actually not very good at it, but since it was a good opportunity, I got it in a drinking set. We were told that this brewery specializes in old sake, and it's their standard! It's a classic! It's a unique old sake with a strong sour taste. I don't usually drink old sake, so I can't even compare. I was told to taste it slowly, so I drank it with that in mind, but I wondered if the character would change if I heated it up.

This is Hisatama Special Honjozo Nama Sake. Compared to the Daiginjo, this one doesn't have as much of an aroma, so it's a bit more alcoholic, but it's relatively refreshing for a local sake. It's really the same type of flavor.

This is Hisatama Daiginjo Namaishu. This is not Hida rice, but Yamada Nishiki, so I wonder if it tastes like Yamada Nishiki's raw sake. But I think it tastes like Hida people. I thought it was a very personal taste. But it was the most elegant and soft taste of Hida's sake. It also has an elegant sour taste.

This is Yamaguruma Dry Ordinary Sake. We had it with the sake tasting set. We thought, "This must be the kind of sake that the locals usually drink. Is the alcohol a little high? It had been a while since we opened it, so we couldn't tell how good it really was... But I could tell that it was a heavy, rich, dry sake.

This is Hida no Hana Honjozo. This is one of the sake for the sake tasting set, but this is the most light taste. I thought there is no such thing as "plain" sake in Hida. But when I compared with other sakes, I felt this one was the most light. Maybe it's not as light as Niigata's sake, but.... Is it good to drink it lukewarm?

This is Tamanoi Ginjo.　The aroma is rather mellow. The taste is also ginjo, but it is more robust. It is a dry and tasty sake, and I really feel that people in Hida like this kind of sake. I'd rather drink it at room temperature, lukewarm, or even hot, than cold. I feel like there are many sakes that are the same.

It is Hida-banji Onikoroshi Junmai Namazake.　But how many kinds of sake called "Onikoroshi" are there in Japan? I have had many kinds of Hida sake, but I think this is my favorite. It is punchy and refreshing among Hida's sake. Is it high in alcohol? It's umami and dry, but you can also taste the freshness of the sake.

HIMURO DAIGINJO NAMA-SAKE This is a daiginjo-like sake, but it still has just a little bit of aroma, just a little bit of fruity taste, and is still a umami-nama-nama. This is Yamaguruma Junmai Kamisumi. We visited a sake brewery before and talked with the owner, but she said there is no clear sake in Hida. I'm not so sure about this time, but I'll take the Kamisumi you recommended! This is a local rice called "Hidahomare", and it is unfiltered and limited! That's why I bought it. It's a dry, matt, umami type with a heavy, thick taste.

Senkou Modern Senkou Solid 2021. When I opened it, there was more swooshing than I expected! I opened it with a lot of force, but it didn't feel that gassy when I drank it. The aroma is slightly fruity, though I can't say what kind of fruit it is. It has a strong sourness, which is typical of Senkou, but I don't like strong sourness, but this one is elegant, so it's okay. It's a very dark sake.

This is Jyoshito Kuheiji Junmai Ginjo Le K Voyage. The moment I opened it, I heard a swooshing sound, but when I drank it, I didn't feel much gas. The aroma is banana-like? or something like that? It's very elegant and mellow. It's sweet and sour like ramune, but it's not too strong, so it's perfect as a food drink! It was gone in a flash, and I wondered if the quantity was too small. I checked the label. I checked the label to see if the amount was too small, but it was exactly four cups. It was a very good experience. Thank you so much!
