I bought a bottle of sake in Matsumoto in the fall, put it away in the fridge and completely forgot to drink it. Two months after I bought it, I opened the bottle. It has a rich aroma and a dry, refreshing taste. It has a punchy taste. I paired it with a one-pot dish of turnips with grated radish. A summer-only version of Matsumidori. The wine-like fruity taste spreads in the mouth and is pleasant. I paired it with a marinated mackerel, and it went perfectly with it. I also paired it with a different kind of salad, such as a Caesar salad with kale, but there was nothing incongruous about it. It is perfect for the hot summer season.
