I learned about a good sake for everyday drinking. The sake is made on Sado Island and all the rice used is from Sado Island. The great thing is that it tastes great when heated. On my way back from a mini-trip to Nagano, I stopped in Ueda and visited the Okazaki Sake Brewery. There I purchased a limited edition sake from the brewery. It has a refreshing taste that is easy to drink. It has no unpleasant taste or habit, and is easy to drink. I drank it with yudofu, and of course it was OK. It might be even better with tempura soba (buckwheat noodles).

As a junmai ginjo, I expected it to have a rich aroma, but the taste was clean and refreshing, in the category of so-called "dry". However, the aroma wafted down the throat. Strangely enough, it goes well with cheese. I do not know the rice used to make this sake. Polishing ratio is 50%.

I bought a bottle of sake in Matsumoto in the fall, put it away in the fridge and completely forgot to drink it. Two months after I bought it, I opened the bottle. It has a rich aroma and a dry, refreshing taste. It has a punchy taste. I paired it with a one-pot dish of turnips with grated radish.
