They use white malted rice used for shochu (distilled spirit), and the citric acidity is good for both sourness and sweetness 🍋.
Very tasty.
Mr. Nonaka, the current head brewer, is continuing to take on new challenges, such as reviving the brewing of sake that had been suspended and overcoming the damage caused by the torrential rains.
I found good sake on my trip🍶.
