It was served hot.
Quite yellow. Aromatic aroma. Slightly sweet and very strong flavor. But it doesn't have the peculiar habit of aging, which is a strange sensation. Numbness on the tongue. 20 degrees Celsius. Delicious. It is very interesting.
This is a BY2017 sake matured in the attic of the miso warehouse at Matsubaya Honten. When you say so, you can feel the aroma of miso.

It violates everything on the label, which says to keep it at room temperature and heat it up, but the owner is on good terms with the brewery and has reported it to the IRS, so no problem.
The owner's knowledge of sake and the proprietress' exquisite customer service made this a very nice place.
