I love it! Sweet aroma, no alcohol smell after drinking, sweetness and roundness stand out. After eating it, my mouth feels satisfied as if I had just eaten a bowl of rice! After a long time in the cup, you can smell the aroma of barley tea? I prefer it cold rather than heated. It was soft and easy to drink, and it didn't leave a weird aftertaste.

I've been so busy with the move that I haven't been able to have a drink at home, but I finally got my room cleaned up and opened Morishima! The snacks were bonito tataki (I exercised today so I got some protein) and Beyond Tofu with sea urchin flavor😳. Morishima, I liked the design and was curious about it. I think this is the first time I've had it. I feel that it has a liquor-like taste, but it doesn't feel old-fashioned, which I like. I'll try heating it up next time.

The sense of family home in the background is amazing. My father gave me a bottle of Toyokuni Junmai-shu. It has a ginjo-like aroma even though it is junmai sake. It is delicious at room temperature or hot. It has a mild aftertaste, so it would be great as a food sake. A clear sake with a slight yellowish tinge. It has a fruity aroma.

Long before I got into sake, Tobiroki was the only sake that I thought was "this is delicious...! I thought "This is delicious...! The other day I came across it again after a long time, and it is still delicious. I think it is the pinnacle of beautiful and elegant sake. (including the correction for my memories 😌)

When I was just getting into sake, someone at work told me that No. 6 was good, and I was curious about it. I don't know much about the different types of sake. I have no knowledge of the different types, but the delicate, sparkling sweetness characteristic of Shinmasa is still present here, and it was delicious.... I'll look into it later...

I've heard the name Kido every time I'm studying sake. I finally came across it. The aroma is not too fruity, nor is it too ricey, but it has a good balance. As I wrote on Twitter, I was shocked by this sake. It was full of sherry and bourbon cask aroma. How is this possible with sake? I was so surprised. The aroma was so Western that I thought it was wine, but the roundness on the palate was sake itself. It was mellow yet aromatic, and I thought I liked it better than wine because I felt it was gentler. The restaurant staff said that this sake is versatile and can be easily matched with any dish, and the carpaccio with plenty of vegetables that I served with it did not ruin it but rather enhanced it, making my mouth very happy. The possibilities of sake are endless! It made me think that the possibilities of sake are endless!

I bought this for a December drink, but the alcohol content is so low that I'm sure I'll finish it soon. Sweet and sour sake like yogurt. It was my favorite type. I enjoyed it on the rocks only as it was swished, but the aroma of the sake did not fade too much as the ice melted. It tastes very drinkable.

Shinmasa Sake Brewery, the one that got me hooked on sake. I asked them to leave it to me and I am glad it came out. The one that woke me up was Tenfrog, but this time it was Yonotori. I wanted to try it... Banana-like aroma. The delicacy of the flavor reminded me of Tenfrog. Gentle, beautiful, delicate, gorgeous.... It was a delightful sake for the first cup. Since it was on the bottom, there was a lot of ori, which also made me happy. I'll write about the food pairing on Twitter.... By the way, I think this is the first time I've had something called kijoshu. Learning and learning.

One of the drinking sets my friend gave me as a gift. Since it is a junmai sake, I thought it would go well with anything that goes well with rice, so I served it with mackerel miso.
