I traveled to Mie and went to a store that carries Jikin with high hopes, but I was told that there is a 10 year wait for reservations for Jikin. 🥲.
I bought a limited edition Junmai Daiginjo for the store, a sake only available locally.
It is full-bodied and rich, but not too sweet, and has a nice sharpness that would go well with many meals. It has a nice sharpness and a long aftertaste.
Mie has delicious seafood, so maybe it goes well with abalone, oysters, etc.? I don't have much experience with it. ☺️
