I bought this bottle even though I am not a big fan of apples, sourness, or sweetness. However, it is a refreshing drink with no lingering tartness or acidity.
I recommend drinking it chilled in summer.

However, I unexpectedly liked the taste and wanted to try Shirataka.
It is easy to drink, with a sweetness that is in proportion to the sake's sake content.

However, I could not match it with the meat dishes that the brewer recommends, so I would like to try it with steak or other dishes if I have the chance again.

Delicious.
They also have Beni Junmai Ginjo and Kogane Junmai Shu.
I would like to try those too.
Sweetness as you would expect from an unfiltered unpasteurized sake.
When paired with yakitori sauce, the sweetness was surprisingly subdued and the sake was easy to drink.

But as you get used to it, it becomes easier to drink with a soft sweetness.

I'm starting to think that I'm expecting rice flavor and richness from the words "Niigata" and "Junmai" and it's not the case.
