I heard a rumor that Brewing Forest had changed its name, but this is the first time I have had the pleasure of drinking it. Yuki no Mayu Junmai Ginjo Nama Shu I drank it a long time ago, so I only remember it as a sweet and tasty sake, but this one has the same sweet and tasty taste! It was like an adult Calpis soda!

Direct Kumi. They bottle the pressed sake directly by hand without transferring it to a tank or other container. It is fresh and slightly effervescent. It is fruity and very delicious. We enjoyed it with fried chicken and vegetables.

Noto Peninsula Earthquake Sake Brewery Reconstruction Support Sake Noto Hatsusakura➕Tengumai Noto Hatsusakura + Tengu Mai" is a sake to support the recovery of the sake brewery. Sakurada Sake Brewery was completely destroyed by the Noto Peninsula Earthquake. The "Noto Hatsusakura Honjozo" miraculously survived. This sake is a blend of "Noto Hatsusakura Honjozo" which miraculously survived and "Tengu Mai" from Kurumata Shuzo, a sake brewery in Ishikawa Prefecture. I have been looking for it since I saw this news and finally came across it. I fell in love with Sakurada Shuzo's "Dakei". I have visited the sake brewery. I would like to continue my support for the recovery, even if it is small. Support for the recovery that I would like to continue: ❣️ Cheers with gratitude for the peaceful 🍶 everyday life!

I also love sake, but doburoku is what got me hooked on sake, so I compared doburoku from different breweries. Shinomine Doburoku I have enjoyed Shinomine from the Chiyo Sake Brewery from time to time, but this was my first time drinking doburoku! I couldn't help but ask the clerk, "Does Shinomine serve doburoku?" I asked the shopkeeper, "Does Shinomine serve doburoku? I had it right away and was pleasantly surprised by its fruity green apple aroma and acidity, and the sizzling sensation as I chewed on the rice that had been ground relatively finely. It was a bottle where you could enjoy the acidity and umami more than the sweetness. Rice polishing ratio: unknown Alcohol content: 12~13 degrees Celsius

Satomi
The second bottle of sake for New Year's Eve was Tenmei. The first one was so good, I got the second one too✨. I was able to close out 2023 with a delicious sake 🫶. I couldn't finish it so I took it home, We continued to have it in the new year ☺️

The figure, which has been on my mind for some time, I caught a glimpse of it at my favorite liquor store and did a double-take, bought this one & opened the bottle the same day! SAGATA SG Nama Sake This is a regular sake brewed with 100% Yamada-Nishiki, and is priced at 1100 yen (excluding tax)! Machida's Triple? Otters, Otters, 30% polished equal togai, Kuzuboshi I bought it immediately because I had hit the jackpot with the beautiful sake made with extra rice secretly brewed at each brewery, such as Machida Triple? When poured into a glass, it had a golden color and a sweet aroma! When you take a sip, you can enjoy its firm sweetness and drinkability! It is a good cosmetic sake, but be careful not to drink too much as it has a high alcohol content! Rice polishing ratio: unknown (other than Yamadanishiki) Alcohol content: 17%.

I was so enchanted by Shuho's Omachi Junmai Daiginjo I had at a bar last month that I bought three different Daiginjos: Aizan, Yamadanishiki, and Dewasanbai. Let's start with Aizan. The aroma on the nose is mildly sweet. The elegant sweetness on the palate with a hint of strawberry, and the acidity and richness that disappears quickly. It has a nice sharpness, and compared to Omachi Daiginjos, it has an elegant or delicate feel to it. It was delicious 🍶.

Tokyo is also experiencing a heat wave soon after the end of the rainy season, and this summer's heat wave and extreme weather have made my body feel tired. I open a bottle of this one for an evening drink to keep my energy up. Hanamup Junmai Ginjo Omachi Hiiri Shigou Bottle Hanayu is originally sold only in 1-sho bottles to preserve the quality of the sake, but only Omachi and Rikuwada are sold in shikogobottles. Well, it was a bottle with the sweet flavor characteristic of Omachi that lingered on gradually! Oh, what's that? I noticed it was empty? If this is the case, I should have bought a regular bottle.., Rice polishing ratio: 50% (100% Omachi is used) Alcohol content: 16%.

Last weekend was an unsettled weekend due to the sudden change in the weather, but to put that mood to rest, here's a toast to summer sake from the Machida Sake Brewery! Machida Shuzo 55 Junmai Ginjo Summer Jun Usu Nigori Omachi A summer sake with a light, refreshing taste and light nigori. There was a warning when opening the bottle, but the bottle opened easily without any sign of spewing! The bottle had already been mixed with some ooze due to storage, so we enjoyed it straight away! The top notes are modest, and when you take a sip, you can enjoy the adult Calpis soda type, slightly bitter grapefruit type acidity and bitterness, and it is a bottle that can be drunk quickly. Rice polishing ratio: 55% (100% Omachi produced in Okayama Prefecture) Alcohol content: 16%.

KAUSUMORI Junmai Daiginjo - Yamadanishiki 40- Nama-shu Finally, we could meet Yamadanishiki from Kakusumori. I'm looking forward to it! Gorgeous aroma. Fruity sweetness and acidity. Soft bitterness at the end. The overall impression is well-rounded, perhaps because of the 40% rice polishing ratio. I knew it would be delicious, and I confirmed that it was indeed delicious. I am so happy.

A-Sakura Junmai Ginjo Unfiltered Nama-shu, Nakadori, Limited Edition This is my first A-Sakura. I bought it because I thought I had to drink it someday, but then I remembered that it was Ringo-chan that I wanted to try. I got myself together and opened the bottle. The aroma is sweet and sour. When I drank it, it was juicy and thick. It is delicious with firm acidity and sweetness. The alcohol that passes through the nose as it goes down the throat with a pungent taste at the end is also good. While you are drinking it, you will be pleasantly intoxicated. I like this one a lot.

Today is finally the 700th check-in, and I was wondering what to open, but I opened a bottle of Senkyoku's seasonal sake [Hope! This sake is a support sake assembled to bring hope to those who have been affected by the disaster around the world! It is an assemblage of Kame-no-o O, Yamadanishiki O, and Omachi, and the taste is light but delicious, with a ripe grapefruit sweetness and lingering aftertaste, and a fairly refreshing mouthfeel. This year, we are buying more and more bottles, so the check-ins will be slower, but we are looking forward to enjoying the changes in taste and temperature after opening the bottle! Rice polishing ratio: 50% for koji rice, 60% for kake rice Alcohol content: 14%.
