Rich and mellow! Sweet, spicy, acidic, bitter, and umami 🤣.
A faint aroma of fermentation is also present.
The whole sake is very strong and you can enjoy it a lot with a small amount 😁It's for evening drinking. ❗️ 
まつちよThis is Tamagawa's untouched sake Gohyakumangoku.
This is the first time for us to serve untouched sake.
The aroma is of slightly cooked rice with a hint of acidity.
In the mouth, it has a mellow sweet and sour taste, but since the sake rice is Gohyakumangoku, it is not as deep as Tamagawa's.
Last year, I drank a limited edition Nakakumi (Kitanishiki🌾), which had a rich mellow sweet and sour taste with a smooth texture.
I want to buy it 🤔
It was good to drink it at room temperature or warmed up.

Hanamaru Sake Mirai Nama Sake
I also like Aizan and Yamadanishiki from the same Hanamup brand, but when it comes to taste and cosmetic satisfaction, I like Sake Mirai the best!

I remember I was allowed to drink a cup of Hakkaisan about 20 years ago, but I don't remember the taste😅.
It must have been since then 🤔.
The initial aroma is mild, but it has a sweet aroma of steamed rice.
When you put it in your mouth, it has a light sweetness of rice and a mild umami.
It has a nice sharp taste like Hakkaisan.
The mild umami, as if it had been aged at a low temperature, is impressive and delicious. KumakichiI heard a rumor that Brewing Forest had changed its name, but this is the first time I have had the pleasure of drinking it.
Yuki no Mayu Junmai Ginjo Nama Shu
I drank it a long time ago, so I only remember it as a sweet and tasty sake, but this one has the same sweet and tasty taste!

Noto Hatsusakura➕Tengumai
Noto Hatsusakura + Tengu Mai" is a sake to support the recovery of the sake brewery.
Sakurada Sake Brewery was completely destroyed by the Noto Peninsula Earthquake.
The "Noto Hatsusakura Honjozo" miraculously survived.
This sake is a blend of "Noto Hatsusakura Honjozo" which miraculously survived and "Tengu Mai" from Kurumata Shuzo, a sake brewery in Ishikawa Prefecture.
I have been looking for it since I saw this news and finally came across it.
I fell in love with Sakurada Shuzo's "Dakei".

Shinomine Doburoku
I have enjoyed Shinomine from the Chiyo Sake Brewery from time to time, but this was my first time drinking doburoku!
I couldn't help but ask the clerk, "Does Shinomine serve doburoku?" I asked the shopkeeper, "Does Shinomine serve doburoku?
I had it right away and was pleasantly surprised by its fruity green apple aroma and acidity, and the sizzling sensation as I chewed on the rice that had been ground relatively finely.
It was a bottle where you could enjoy the acidity and umami more than the sweetness.
