I finally found the Wind Forest.
At first, I felt a strong gaseous sensation. After that comes bitterness (astringency?) and then sourness. Then comes bitterness, followed by sourness. Then comes the umami at the end.
Mild and mellow with a strong flavor, perhaps because it is nigori sake.
