It was a very tasty sake with juicy flavor in addition to sweetness and acidity 🍶. It tasted good right after opening the bottle with a slight effervescence, but the acidity that lingered afterwards was too strong. The second day after opening the bottle, the acidity in the aftertaste rounded out and I liked it better.

It has been a long time since I have had a Tobiroki. It has a good balance of umami, sweetness, and acidity, and seems to go well with a variety of meals. Of course it is delicious, but considering the difficulty of obtaining it, I think there are better sake available elsewhere. However, considering that this type of sake has set the trend for sake for the past 20 years, I think it is a wonderful sake.

It has a full flavor of rice that has increased with maturity, just like hiyaoroshi sake, and the acidity unique to sake brewed with sake yeast is simply delicious. It is perfect as a food sake, and since it requires refrigeration, we drank it cold, but it would also be delicious lukewarm.
