It has been a long time since I have had a Tobiroki.
It has a good balance of umami, sweetness, and acidity, and seems to go well with a variety of meals.
Of course it is delicious, but considering the difficulty of obtaining it, I think there are better sake available elsewhere.
However, considering that this type of sake has set the trend for sake for the past 20 years, I think it is a wonderful sake.
