Forgot to take a picture. It was delicious last year, so I repeated it. It has a slightly milky taste among the Jundo Isshu series, and that is what makes it so addictive. This series is a pure large spec. and has the best taste and cosmetics, so I always buy it.

Forgot to take a picture. The topic of the day day firstrot. Great mild aroma, good gasiness and flavor, easy drinking as only low-alcohol can make it. I haven't had many mild types, but I think I'm going to get hooked on this one. It was a great match with sushi.

First Machida brewery. Highly anticipated as an omatologist. It has a solid sense of gas, a melon aroma, and a robust flavor of omachi, yet it is easy to drink. A bottle of this excellent wine was finished in no time at all.

Forgot to take a picture. Purchased when I went to Tochigi. It is the first of the "EXCITING SERIES" and the first Nanamizu single-stage brewing. It has a strong sourness and sweetness in the mouth, but finishes with bitterness. One-step brewing is supposed to result in a sake meter of -50 or so, but this one is a whopping +1.1. I wonder what kind of sake brewing process is used.

Since I am a sake novice, I only drink seasonal Sentori and this is my first time to try modern Sentori. By the way, I have not tasted classic Sentori. The volume and juiciness of Omachi came in a very refreshing mouthfeel, and finished with acidity and sharpness. It is amazingly delicious and may be the best of the year. I would like to buy other modern Sentori, but for some reason I think I like Oumachi the best.

Gold Phoenix is usually hard to reach. Since it was included in Mashidaya's set, I was able to drink it for the first time. It has the sweetness and acidity typical of Aizan, but it is very elegant and easy to drink. Personally, I think Black Phoenix is more flashy, while this one is more subdued and has a luxurious impression. I opened it on an ordinary day, but thanks to this bottle, it became a special day.

Asahitaka was given to us as a return gift for our hometown tax payment. I was curious about the difference between Asahitaka and Jyushiyo Honmaru, so I opened the bottle immediately. The elegant sweetness and the lack of alcohol taste that one would not expect from an alcoholic beverage are quite similar to those of Honmaru, and the taste is excellent. Speaking of differences, Asahitaka has a sour taste and a slightly subdued impression. It is hard to say which is better than Honmaru, and it is a very tasty bottle.

Kouei Chrysanthemum 5 kinds of drink comparison. Finally, the last one. The new Harjion wanted to produce 4 MMP, but they didn't get much. However, it was actually very aromatic, with notes of muscat and grapefruit. The alcohol content is also high among Koei Kiku's, at 15%, and it has a strong alcoholic feel, making it a bit dry. Once again, I was able to compare various Koei Kiku and recognize both similarities and differences. Even as I write this, Snoqualmie has gone on sale, so I'm going to buy some tomorrow.

Kouei Chrysanthemum 5 kinds drinking comparison. Gekko is the only Kouei-Kiku brewery that makes its own sake. Gekko is the only Kouei Chrysanthemum sake made with a traditional sake yeast yeast yeast yeast. It does not have that much lactic acidity, but it has a good balance of moderate acidity, sweetness, and umami. After opening the bottle, the sweetness and umami increase and the taste becomes robust and delicious.

There happened to be five kinds of Koei Chrysanthemum, so we compared them. However, a novice like me cannot describe the differences well, so I will be brief about each one. Anastasia Green has a fresh aroma and acidity, with a hint of sweetness. The hardness has been removed because it has been a little while since I bought it, and the change in flavor after opening the bottle is also nice.

The one I bought thinking it was a draft sake, but it was fire-aged. Still, I love Nabeshima, so it was no problem at all. Even though it is fire-aged, it has a gassy, robust flavor that is typical of Omachi, not too sweet and with a bitter taste. It went well with meals, and I finished it in no time at all.

I went to Marugoto Kochi in Ginza just after it went on sale, just in case it was not good enough, and miraculously it was there, so I captured it safely. I was surprised that they had been making such a distinctive sake for 24 years. The key flavor was more refreshing than the regular CEL24 right after opening the bottle, but the sweetness, aroma, and juiciness increased as the day went on. Personally, I liked it better than normal and it was a luxurious experience.

The new Hanayo sake season is finally over. I did not buy THE MATCH, so this is the last one for me personally. It is the core flavor of the Hanahyokyu, still pineapple, gorgeous and sweet, with a bitterness at the end. I don't plan to pursue the nao kumi series, so I guess the next time I can drink it will be in winter.

Aizan from Toyo Bijin's Jundo Isshu series. The one you can be sure of even before you drink it. It is juicy, sweet, gorgeous and very dark. You can't drink more than one cup at a time, but it's just right for one drink. The cost of the Jyundo Isshu series is great, as you can enjoy this for 1,650 yen.

This is the fourth bottle produced after Normal Yamadanishiki, Effervescent, and Hozu. I missed many chances to buy it, but I managed to get it. It is close to the normal Yamadanishiki, but has a good amount of wood vat flavor, and a more complex taste. Personally, I don't like the strong aroma of wooden vats, so I prefer this one. The drinkability is top-notch, and I finished it in no time. We have high expectations for future productions.

Purchased at the Fudo store while on a pilgrimage to Mt. It is limited to 1,200 pieces and has a sticker with a serial number. The blue bottle with 35% Yamada-Nishiki rice polishing reminds me of a certain pineapple brand, and the taste is similar. In the mouth, the pineapple aroma and sweetness overwhelm the palate, but there is a surprising sharpness and bitterness that makes it a good food sake.

Shinshu Kirei純米吟醸 山田錦

This is the third Shinshu Kamerei this season. Like the previous two (Hitogokochi and Yamane Nishiki), it is unquestionably delicious, but more balanced. The flavor continues to develop after the bottle is opened, making it even more delicious. Tomorrow is the Gokaicho at Zenkoji Temple. I plan to visit Okazaki Shuzo & Zenkoji at some point myself.
