Date of production: December 2023 Rice: 100% Yamadanishiki Rice polishing ratio 40 This sake is made from Yamada-Nishiki harvested in the Houou Mita contract area, which stretches from the Sha district to Yoshida and Mizuo, a special A district in Hyogo Prefecture. This product is a product of "Houou Mita," which is carefully brewed to convey the local climate, the story of the sake rice that changes from year to year depending on the climate, and the thoughts of the producers. As you pour it into a glass and the sake temperature rises, you will enjoy the spreading ginjo aroma and the mellow, gentle rice flavor. The bottle is filled with the story of that year's Yandanishiki. The aroma is mellow, with notes of muscat and melon. The gentle, crystal clear taste is simply delicious!

Home drinking 2024, 1st bottle. This was the first bottle we opened because it was New Year's Day. The balance between sweetness and acidity was exquisite, and the bottle-aged flavor exploded. The depth of flavor and aftertaste was as good as the strong flavors of the Osechi dishes. It has a good aftertaste. Date of production March 2021 Shipment date: November 2021 Rice: 100% Akita-grown Kame-no-o Yeast used: Kyokai No. 6 Polishing ratio 45 From the etiquettes: The nose has hints of Japanese pear, white peach, apricot, and a subtle truffle-like aroma. The impressive, clean, ume-like acidity is combined with the fresh greenness of the wooden vat and a clear sweetness that spreads over the palate. The soft aftertaste has little persistence and fades away like a phantom. It is best to drink it without storing it. From the POP of the liquor store: "Secretly aged. From the Etiquette This product is a limited production Junmai Daiginjo-shu made from "Kameiki" rice produced in Takahata, Yamagata Prefecture. Kameiki" is an original mutation of Kame-no-o rice, and offers a mellow aroma, refreshing acidity, and a refined, artistic touch. The ears of "Kame-iki" rice have "wild hair" on the tips to protect themselves from enemies. The name "Kameiki" comes from its beard-like appearance and the use of traditional sake-like mustache characters on the label.

From the etiquettes Kumamoto Castle is a pure rice sake brewed in Kumamoto's rich natural environment, using all Kumamoto rice Hana-Nishiki, limpid underground water from the Aso mountains, and Kumamoto yeast. It can be enjoyed cold or warmed up.
