From the Etiquette This product is a limited production Junmai Daiginjo-shu made from "Kameiki" rice produced in Takahata, Yamagata Prefecture. Kameiki" is an original mutation of Kame-no-o rice, and offers a mellow aroma, refreshing acidity, and a refined, artistic touch. The ears of "Kame-iki" rice have "wild hair" on the tips to protect themselves from enemies. The name "Kameiki" comes from its beard-like appearance and the use of traditional sake-like mustache characters on the label.

From the etiquettes Kumamoto Castle is a pure rice sake brewed in Kumamoto's rich natural environment, using all Kumamoto rice Hana-Nishiki, limpid underground water from the Aso mountains, and Kumamoto yeast. It can be enjoyed cold or warmed up.

The impression was that it was less sweet and more refreshing than the gold label. From the etiket The yeast isolated from our ginjo mash in the 1965 brewing year was registered and distributed as "Kyokai 12 Yeast" by the Japan Brewers Association. We have now revived sake brewing with this yeast for the first time in many years. We have created a junmai ginjo-shu with a refreshing aroma, pleasant acidity, and a crisp taste.
