Purchased at a liquor store near JR Ujima Station in Toyomae City It is said to be made from an ancient rice called "Short-stalked Boat", which is an ancestor of Yamada-Nishiki. (Just after opening the bottle) Drink it cold. Slightly cloudy white. Weak aroma similar to amazake. In the mouth, it has a sweet taste with a tingling sensation. Dryness spreads later. The lingering aftertaste is a little long. Warmed to lukewarm Sweet aroma and a strong smell of alcohol. The sweetness is the same in the mouth, but the dryness is stronger. To be heated hot The tangy smell of alcohol weakens considerably. The dryness weakens and it becomes easier to drink. Because the sweetness remains the same, it tastes better than cold or lukewarm sake. We paired it with sashimi and cheese at all temperatures, but it goes best with hot sake and cheese.

Drink it cold Clear and colorless. The aroma is mild, but there is a slight hint of maturity. Aged richness similar to hiyaoroshi in the mouth. Hot sake Even paler than this year's production. In addition, the matured flavor can be felt even when the sake is heated, and it does not move in a positive direction. It does not move in a positive direction, so it may be more accurate to describe the taste as "aged" rather than "matured". I realized that just because it is aged does not necessarily mean it will be tasty.

Using a sake rice I've never heard of called "Kame-iki." I wonder if this sake rice is related to Kame-no-o. Drink it cold. The sake has a strong richness despite the high rice polishing ratio (40%). The aftertaste is clean, clear, and delicious. It goes down smoothly.

A strong dryness is immediately apparent. Spicy dryness spreads quickly in the mouth, and as the label says, it is dry. Long finish as the fullness lingers in the mouth for a while. When warmed, the ginjo aroma becomes stronger and the aftertaste is much shorter. It may be classified as a mellow dry sake, but it has a different taste from Amanoto.

Purchased at a liquor store in the city's Omiya district (immediately after opening the bottle) Drink cold Slightly cloudy white The aroma is gorgeous, similar to that of white wine. Strong acidity on the palate. Floral taste spreads next. Very slight astringency in the aftertaste There is no rice flavor and it tastes almost like a white wine. The label on the back of the bottle says that about 6 months have passed since the production date and that it is unfiltered and unpasteurized, so the taste may have changed considerably since its production. The brewery's website says that the rice used is Kame-no-o Koshihikari, which is a type of Kame-no-o rice, and it seems to be made from Uruchi rice, giving the impression that there is a gap between the taste and the description. It does not seem to go well with crab miso or tako-washi, but it goes perfectly with cheese. I would like to drink it with Western food like wine. I wonder what the back label says about the traditional method of honjikomi (brewing).
