Kokuryu純吟(2023.11製造)
くま吉
Purchased at a liquor store near Chidori Station
Wrapped in newspaper after purchase and stored at room temperature in a dark place at home for one year to mature
(Immediately after opening the bottle)
Slightly yellow in color.
The aroma has a pronounced aged aroma.
Mellow and rich taste derived from the aging process in the mouth.
The taste is immediately sharp.
The dryness is almost imperceptible.
When heated lukewarm, the aroma of maturity increases and the taste becomes more peculiar, so it is not good.
When heated, the flavor becomes bland.
It goes better with salty meat dishes such as ham than sashimi or simmered dishes.
When compared to the other two Kuroyûs, it has a noticeable quirkiness, but when considered as a stand-alone sake, it tastes similar to hiyaoroshi, which is not a bad thing.
Compared to the Aki-agari, it shows how difficult it is to properly mature sake.
