★★★ Toyobai Junmai Ginjo Patisserie Sake Rice polishing ratio: 55 Rice used: Toyobai rice Sake degree: -40 Amino acidity: 1.1 Acidity: 1.3 Alcohol content: 14 I opened this bottle as a White Day gift for my wife. My wife rarely drinks alcohol, so she took a sip and the rest was all mine. It was sweet, but it was "the sake" for my wife. For me, it's sweet, but not too sweet. However, it is sweet😅. Still, I enjoyed it 🙇.

This is Sengoku's debut: ✌️ After the sweet and sour taste, the sweetness remains at the end. The aftertaste is indescribably delicious. It was delicious 🙇.

★★★★ Fudo ORIGARUMI Junmai Ginjo Unfiltered Nama-shu Rice:Dewa Sanzu (Yamagata Prefecture) Rice polishing ratio: 55 Yeast used: 1801 Sake Degree: -7.5 Acidity: 1.7 Alcohol content: 16.2 Caution about opening the bottle. The cork never flew open, but right after opening, hold it with your finger just before it spills. As is the case every time, the sake recommended by Echizen-ya is sure to be good. I tried it with a high hurdle because of its reputation here, and it did not betray my expectations at all. It has a good balance of fizziness, sweetness, and bitterness. I enjoyed it very much.

★★★★ KURORYU Kojo-shu Rice used: Gohyakumanshu from Fukui Prefecture Rice polishing ratio: 55 Daily Sake Degree: -30.0 Alcohol content: 12 My wife, who rarely drinks alcohol and says she can't drink sake, said it was delicious. She said it was delicious. I've never had any other kijoshu, but I wonder if it is basically sweet? I'll look for it next time I go to a liquor store. But I actually have a bottle in the back of the fridge: ✌️ That's limited to 500 bottles nationwide for general sale, apparently, so I think I'll let it sit for a while 😅.

★★★★ W Yamadanishiki 45 Junmai Unfiltered Nama-shu Junmai Nama-nazake Ingredients: Yamadanishiki Sake Degree: -2 Acidity: 1.3 Rice polishing ratio: 45 Alcohol content: 17 I always buy a few bottles when I go to the liquor store, so I will refrain from going to the liquor store for a little while to reduce the stock I have bought 😔. Strawberry(?) aroma is somewhat as it looks. The aroma of the strawberry is somewhat as it looks and it doesn't disappoint. Very sweet and strong alcohol. I enjoyed it 🙇.

Yesterday, I was wondering what to drink for the 50th check-in, but I forgot all about it and unknowingly opened this sake, which is always treated as an obstacle in the refrigerator because of its slightly fat bottle. It looks like a sweet white wine, but it is still sake. It leaves a sweet taste in your mouth. This bottle is a must have for those who want to conquer all the prefectures of Japan plus more. I enjoyed it very much.

The bubbles were so strong you would think it was sparkling. It was crisp with sweetness and acidity. It was delicious 🙇.

The old man is trying his best to explain in broken English, but I'm Japanese💦. On the way home, I went to Echizenya to buy some brewer's kuheiji, but bought Fudo and Haneya, which the old man recommended. I'll try the Fudo at a later date, but first the Haneya. Slightly fizzy, fruity aroma. Sweet & bitter. It was delicious 🙇.

★ Rice used: Yamadanishiki Polishing ratio: 37 Water used for brewing: Water from Oku Oyama Sake meter rating: +3 Acidity: 1.6 We received this sake as a "gift" from one of our senpai who has been supporting us to conquer all 47 prefectures of Japan. It has a unique taste... I blended it half and half with yesterday's sake and we could drink each other. I regret that the sentence has some kind of thorn in it. It was delicious 🙇.
