Tonight, we have a first in the series, this one from the Higashitsuru Sake Brewery in Saga Prefecture. It seems to be a 🌸🍶 spring sake, but I'll have it in delay mode as usual😅. From the opening of the bottle, it has a gorgeous acidity and a nice greenish pineapple aroma 🍍☺️ The top clear layer is sweet and acidic and juicy, but the second half is characterized by bitterness, making it easy to drink 😋. The sake rice is different, but I think the quality is similar to that of Hana-yosuyu. Saga still has a lot of good sake 🥳.

I've been curious about this local Saitama sake 🍶 for a while, but never had the chance. You should read the endorsement carefully...the lid "pops" when you open the bottle. It's a lively sake 🍶...fruity ginjo aroma...a hint of sizzle! The sweetness of the taste of rice... sweetness, bitterness, acidity... the balance is perfect... yummy! At home. This is the first time I have had Concept Workers Selection, Aged Sake. When I poured it into a glass, it was slightly colored, and the aroma had a strong liquor feel to it. When you put it in your mouth, you can feel a tingling sensation all over your tongue, and the alcohol that passes through your nose is very strong. I don't know if it's because I've heard it's an aged sake, but for some reason it feels like whiskey in the throat. This is the impression I got right after opening the bottle. Nakanori-san from last year's Shinshu Jizake distribution times that I drank last week: ‼️ Usually sweet and simply delicious 😋. I think I liked the secret course better with more flavor on it. It has a taste that is typical of Shinshu sake, and would go well with soba noodles or even meat 😋. This kind of sake is perfect for a regular drink 👍

The last sake to be introduced at the welcome party was by Nakanori-san, a Kiso connection, since we were unable to prepare sake from Yukawa-san, who brewed Shirakiku in Okunonoto. The lid opens quickly. Lactic acidity, savory smell of rice. Apple, umami, refreshing acidity, not too forward sweetness, plum-like acidity swells. Delicious on its own. I am a fan of baby star with hot water, but this time I left it as it is. The taste of the baby star matches the deliciousness of the sake, and the sake envelops it nicely. The combined aftertaste is irresistible. It is so good that I would buy it if I tasted it.

Origuchi Sake-ten suddenly started taking reservations for Wakabisu, so I went to make a reservation last week and received it today. The rice is Kami no Ho. I didn't feel any gas, but there were lots of bubbles in the glass. I was told it was a food type wine, but it was more fruity and pineapple-like than I expected. It's not flashy, but it's delicious with a moderate sweetness and flavor. Wakabisu sake brewery is close to Aoyama-cho station, so you can go there by train 🤔.
