At Kaki-numa-san. Choice by recommendation. It is another brand of Koganezawa which was damaged by the earthquake. This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.

I've been making my way to restaurants with good service lately. Today they served me a fresh aged sake. Today is February 6. This is my first Kinkame. My first impression was that it was very good! Next, it has a strong umakuchi taste. The acidity at the end is good, just like Yamadataro. It is like a light kijoshu, and it is delicious. Shiga is nice.

We slipped in at the last minute to listen to the toji-san who was a bit curious about us. ◉Hokkoku Kaido Junmai Sake The rice used for this sake is Tamakae. Hokkoku Kaido Junmai Daiginjo Sho A high quality sake. The mouthfeel is clear and fruity with a good acidity. This is delicious. Overall, the impression was a bit refreshing. Only one sake brewed last year was made by Touji Nakamura, who came from Takeuchi Shuzo. The sake he brought this time was the same one, and he said he couldn't drink it anymore. And this is where time ran out. It took us about 1 hour and 45 minutes to go around the venue. On the way back, we took the train to visit a liquor store in Kusatsu City, Shiga Prefecture. The owner of the liquor store was just visiting the same event, so we spent about an hour talking with the chatty owner, and then we safely returned home.

The acidity is citrusy with a crisp, bitter taste. Overall, it is a refreshing summer sake. It is well-balanced and can be drunk easily. The yeast seems to be different from last year's, and judging from the other reviews, it may be a different one. (It's also possible that my taste buds are wrong...) If that's the case, I look forward to it every year! This year's was my favorite type❣️.
