Kansai Sake-new year party ㉔ After a short cab ride, we went to Chuin-san, familiar to us from Aladdin-san's post. Inokashira, a sake I had never heard of until now😅. The rice used is Hitogokochi. I think it was fresh, fruity and gently sweet 🤔.

I bought this at the brewery's direct sales counter on my GW trip to Nagano! I had a great shopping experience with the courteous staff and went home feeling great! The aroma is what you would call "sake" with a hint of alcohol. It also has a grassy nuance. Immediately after taking a sip, there is a pleasant sourness that lasts until the end. Of course there is sweetness, but if anything, it is more umami. The bitterness is gentle at the end. It has a juicy atmosphere with acidity as if it is made from a sake yeast yeast. Kurosawa is a brewery that specializes in making sake from the "nama-hashiroshi," so I was convinced after drinking it that it was made from the "nama-hashiroshi. I was told at the brewery that the sake has an excellent balance of the four tastes of sweetness, flavor, acidity, and bitterness, and this is exactly what it tastes like. It has a good acidity, but it is not showy at all. It is a sake that goes well with any meal, and I am sure I will become a fan of Kurosawa Shuzo after drinking it. This is their regular product, so they are a brewery of extraordinary quality. It goes well with shime saba (mackerel), salty yakitori, grilled fresh onions, and omelettes! It goes with everything!

Purchased at a new roadside station in Yachiho Kogen. The brewery is located in the uppermost reaches of the Chikumagawa River. It is aged at a low temperature in an ice cellar and has a high alcohol content. When chilled, it has a mild flavor and spicy acidity, and when lukewarm, it has a spiciness and a sake-like aroma. Tasted at Umeda Hankyu Department Store. The rice was said to be Gohyakumangoku. The quality of the sake is clean and refreshing for hiyaoroshi. It is easy to drink without a sense of maturity. As the person in charge said, it is a quiet type of sake, so I think it is suitable for a mealtime drink.

It looks like all of them use locally grown rice, as did the two types of Kitanosho I posted the other day. It seems that only Ryu-ryoku and Koko use Jinryoku all the time. I'm sure there are other places like Okura that use it for single use. When I tasted it, my impression was that it was quite sweet and the second half was heavy, but it was smoky and the flavor of the rice came through with a bang. It has a strong bitterness at the end. It is not the type of sake I would drink on its own, so I will have to wait and see. I don't think it should be chilled too much. If you like Shimane or Tottori area sake, this would be good for you. I think it has a quality of sake that would not be affected by letting it sit for a while. There are glimpses of sweetness and a fruity atmosphere, but I wonder if it's basically more of a classic. Is it a multi-faceted, multi-personality sake?
