Light and fruity aroma. It is so light that when you first drink it, you may think it is a low-alcohol sake. It has a refreshing acidity and a hint of sweetness, and it goes down quickly. It is just the right sake for a hot day.

This sake is from Sabae City, Fukui Prefecture. The city is home to the world's three largest eyeglass production centers (Italy-China-Sabae) and the hidden Mecca for live idol shows, Sun Dome Fukui. I have lived in Sabae for about three years and am still a fan of Sabae glasses (although my current glasses are from Sabae Outlet). The word "kasandome" is said to mean the gorgeous candlelight that illuminates the wedding table. A far cry from the Hayaseura I saw earlier, but powerful! Slightly yellow in color, it has a twisted aroma typical of local old-fashioned sake, an alcoholic flavor typical of honjozo, and a full-bodied sweetness that follows the flavor of the entrée like a secondary melody. How about if you warm it up? The sweetness comes out with a sharp taste, the twisted aroma becomes a little stronger, and the lactic acid bacteria flavor (not so much sourness) is moist and disappears after 5 seconds. The impact of the sweetness is slightly stronger. The sweetness has a slightly stronger impact, and it wraps up the oiliness and bitterness of wild vegetable tempura well. Well, it is hard to say whether it is good at room temperature or warmed up. I drank a low-alcohol sparkling sake called "Hwasong Sparkling Metodo Rural" last May when I went back to my hometown.

Purchased at a local liquor store's sake distribution program. Very sweet with an apple-like aroma. The sweetness is combined with sourness to make it easy to drink.

The other day, I went to visit Masutani Hamono (Echizen Uchihamono) in Fukui Prefecture and bought this Fukui sake. It had a fresh and rich flavor like honey apples, and in the aftertaste, a bitter aroma like caramel appeared.

I went on a sake brewery tour in Echizen City, Fukui Prefecture. I bought a bottle of Junmai Daiginjo brewed with Gohyakumangoku, a locally grown sake rice. I had only ever drunk Junmai Daiginjo with Yamadanishiki before, so I was surprised to find it had a completely different and refreshing taste.
