I bought this at a Japanese sake festival. I bought it because it can be heated. It has a light freshness that is typical of a freshly stored sake, but it also has a rich and somewhat ripe taste. It definitely tastes better when heated and is juicy! The aroma is also very pleasant! It's interesting to note that they also have a heated version of their honjozo sake! I heard that the brewery is located in Sabae, but I used to go to Sabae just to see the spring water and never drop a penny, so I was able to atone for my sins by buying it here! Adult travel to Hofu, Yamaguchi In the past, there used to be an abundance of sake breweries, but now there is only one.

The 8th Japanese Sake Festival @ Osaka Bay Tower (2) Fukui Prefecture's "Hwasoku" booth. I was disappointed that they didn't have the special limited edition sake they brought before, but the nice helping staff was kind enough to help me out 😁. Thank you very much, Umaumai 🙇. Hana Candle Sparkling Methode Rurale] The most popular sparling. Sweet and sour, but not too sweet. ANOTHER-KURO One-Stage Brewing The brewer said it was sold out because they were told that this year's production was better than last year's. Last year's was just bitter and awful. It is sweet but surprisingly not that sweet. ANOTHER-SHIRO- 40% malted rice brewing. I think it had a pineapple taste before, but this time it didn't leave much of an impression. The warmed-up ginjo Chunchunchunchunchunchun. In Fukui dialect, "very hot" is called "chunchun. I think it would have tasted good even without being heated. Hanashoku Junmai Namaisouzou It has a strong umami flavor and is easy to pair with a meal. Candle Junmai Daiginjo Kurauchi Hizokura Shu 50 It was drunk and left no impression even though it was a secret collection. I visited twice, and the second time I was too drunk to remember...

The 8th Japanese Sake Festival at Osaka Bay Tower ② Hana Shonoyo Sake Brewery I had heard of the name, but this was my first time to visit the brewery. Umaisan was staffing a booth here 😳. I guess that's why he visited this booth so many times and drank all kinds of sake 😁. I drank Sparkling Methode Rurale It was one of the first bottles, so I was able to drink it freshly opened 😋. It was sweet and sour like a cider 😋. I was allowed to drink only the lees part afterwards, but it was like adding alcohol to apple juice 🍎. ANOTHER-KURO - single-stage brewing Sour but not too sweet, just the right balance. ANOTHER-SHIRO - 40% malted rice brewing It was sweeter than Ichidan. Diving heated ginjo-chunchunchunchun It is said to be exclusively for kanning. It was also delicious at room temperature. Junmai Daiginjyo Kurauchi Hidarashi-shu 50 It was smoky just like the pamphlet said it would be. Junmai Namaisake This sake was not on the list. It was quite refreshing and less impressive than the other sakes from this brewery... I think it's also the order in which we drank them 🤔 All of this brewery's sake was Gohyakumangoku. The 8th Japanese Sake Festival @ Osaka Bay Tower (・ω・`) Chunchun means like hot in Fukui. It's so cute! First of all, it is beautiful when served cold and has a ginjo aroma, but it is quite dry and hard! Then we went to the heated section and tried it at 55 degrees, just as the label says. The flavor and aroma increase without changing the character of the taste! This is the best choice for heated ginjo sake! It's a little disappointing when it's lukewarm, but hot is better! The guy who heated it for me asked me if it was okay to drink in hot weather. The guy who warmed the sake asked me if it was okay in the hot weather, but I was still drawn to the heated sake corner! I was going to buy the last one, but they didn't have it, so I decided to buy a bottle of Nama-Seikyu. I've been paying attention to the Ikusame since last year when I was impressed by the Kujyu Sakura Ikusame, and I was told it was good for heated sake, so I bought it without trying it!

[Fukui Spring New Sake Festival (6) Next, visitors can enjoy a glass of sake from their own local brewery. Hanashoku Junmai Daiginjo Betsuatsurae The aroma is like grapes with a hint of sourness, the mouthfeel is clean and sweet with a pleasant aftertaste, and there is a lingering bitterness in the back of the throat. I bought some salted sea urchin, which is a perfect match for sake, but is usually hard to find. The taste was so agonizing that it made me want to drink more sake. I think if I recommend [salted sea urchin] to people outside of the prefecture, they will be puzzled how to eat it 🤔.

It is recommended to be warmed up from room temperature, so I warmed it up a little and drank it. It was easy to drink, with a strong sense of umami and a quick kick. Overall, it has a soft flavor that goes well with cold winter meals.

Sake in Sabae, Fukui Prefecture. Sabae, the city of glasses. I lived there for about three years. The name "Kashon" was taken from the flickering flame of a candle at a wedding celebration. It was named in honor of the Emperor Taisho's marriage. First of all, it has a strong sweetness that is honestly rice-like, and when you poke at this sweetness with your tongue, a pungent taste emerges. There is also a slight hineyoshi aroma and a slightly astringent and hard taste like sake lees. It tastes like a country sake (I like that kind of sake) that has been drunk for hundreds of years. How about if you heat it up? The taste loosens up a lot, and the sweetness and spiciness swell up at the same time. The hineyoshi and the hardness of the sake lees are softened, and the strong sweetness does not hit you, but becomes a whole with the spiciness. It becomes softer and much easier to drink. It is not too tiring to drink, and can be easily matched with anything. It can be used for any occasion, from an everyday evening drink to a sake to be shared with others at a candlelit banquet. The same brewery also has a brand of sake called "Echizen Kokufu," which is located in Echizen City (formerly Takefu City), a town next to Sabae, where Murasaki Shikibu lived for about a year away from Kyoto. Coincidentally, Murasaki Shikibu is the main character in next year's Taiga "To the Luminous Kimi. I wonder if the events in Echizen-kokubu will also be depicted in the film.
