Sake in Sabae, Fukui Prefecture. Sabae, the city of glasses. I lived there for about three years. The name "Kashon" was taken from the flickering flame of a candle at a wedding celebration. It was named in honor of the Emperor Taisho's marriage. First of all, it has a strong sweetness that is honestly rice-like, and when you poke at this sweetness with your tongue, a pungent taste emerges. There is also a slight hineyoshi aroma and a slightly astringent and hard taste like sake lees. It tastes like a country sake (I like that kind of sake) that has been drunk for hundreds of years. How about if you heat it up? The taste loosens up a lot, and the sweetness and spiciness swell up at the same time. The hineyoshi and the hardness of the sake lees are softened, and the strong sweetness does not hit you, but becomes a whole with the spiciness. It becomes softer and much easier to drink. It is not too tiring to drink, and can be easily matched with anything. It can be used for any occasion, from an everyday evening drink to a sake to be shared with others at a candlelit banquet. The same brewery also has a brand of sake called "Echizen Kokufu," which is located in Echizen City (formerly Takefu City), a town next to Sabae, where Murasaki Shikibu lived for about a year away from Kyoto. Coincidentally, Murasaki Shikibu is the main character in next year's Taiga "To the Luminous Kimi. I wonder if the events in Echizen-kokubu will also be depicted in the film.

This Monday I celebrated my birthday, the following Tuesday I entered my second year of Sakewa, and this time I finally reached 100 check-ins🎉. Since I had to work from early morning until late at night on Tuesday, I finally settled down on Wednesday night and decided to quietly open a triple celebration sake 🍶 with this one I chose. It's from Fukui, but even more locally, from the Yutaka Shuzo brewery near Takefu: "Hwasoku Junmai Daiginjo Kura-Hisouzakusyu 40"! A bottle brewed with sake rice grown and brewed with water from the Hino River that flows through the land where I was born and raised! Smooth mouthfeel, smooth taste, melon-like aroma on the nose, and a pleasant aftertaste. The brewery's concept of "food sake" itself, the image of a sake that accompanies a meal without interfering with it. The ara sashimi we ate with the entrée expanded the umami, and the salmon sashimi cleared up the fat. The word "kasoku" means a candle or candlestick that is lit at weddings and other celebratory events, and was named after Emperor Taisho on his wedding day. It was also a good sake to look at myself once again, as I will be Just, not Around my age, but Over next year✨. I think my goal for the second year is to be around the point of winning the national championship 😁. The 4th picture is the birthday cake that my wife and daughter picked out for me 🎂.

The booth of Yutaka Sake Brewery "Hana Shokudo" in Fukui Prefecture. I had never seen this brand before, but the brewing process had changed, and I was allowed to try some of the few remaining limited editions that were not on the list 😋. Again, the brewery's staff was very helpful and friendly, and they told us what we should drink. Sparkling Methode Rurale" "ANOTHER-KURO-Nama ANOTHER-SHIRO-Nama "Hanasoku Limited Edition Ginsei" 🔴. The "Hanashoku Limited Edition Ginsei" has a rich fruity flavor, and the "ANOTHER-KURO-SHIRO-SHIRO" has a unique aroma. ANOTHER-SHIRO-Nama" has a very sweet aroma and tastes like pineapple.

This month we had a lot of drinking outside, so it's been a while since I've had a drink at home! I got a bottle of summer sake "Kashoku", which is rarely seen even in my hometown, because there was some left at the liquor store! The mouthfeel is sweet with a refreshing acidity, and the mellow aroma lingers until the end. It seems that more emphasis is placed on the mellow aroma than on the refreshing taste! Although it is a summer sake, it is a perfect bottle for long nights in autumn. I felt it has the potential to be as good as many dishes in the autumn season of taste.
