Hanashoku Junmai Daiginjo Betsuatsurae The aroma is like grapes with a hint of sourness, the mouthfeel is clean and sweet with a pleasant aftertaste, and there is a lingering bitterness in the back of the throat. I bought some salted sea urchin, which is a perfect match for sake, but is usually hard to find. The taste was so agonizing that it made me want to drink more sake. This month we had a lot of drinking outside, so it's been a while since I've had a drink at home! I got a bottle of summer sake "Kashoku", which is rarely seen even in my hometown, because there was some left at the liquor store! The mouthfeel is sweet with a refreshing acidity, and the mellow aroma lingers until the end. It seems that more emphasis is placed on the mellow aroma than on the refreshing taste! Although it is a summer sake, it is a perfect bottle for long nights in autumn. I felt it has the potential to be as good as many dishes in the autumn season of taste.

I asked the shopkeeper if there was a stylishly labeled hwasong and he said it was good. The color is light yellow, the aroma is not strong, but the flavor and juiciness spread in the mouth. It has a light acidity. I want to support this sake brewery that is trying various things.

Reminiscences of Katamachi, Fukui City, on the eve of the Upper House election ④. ［I had another round of drinks at Marukoma. The sake was a dry junmai sake with a full rice aroma and a rounded mouthfeel. The aroma of full rice, the rounded flavor and minerality, and the finish with a lingering mineral flavor and sweetness. ［When visiting Marukoma, sashimi made from fresh fish is a must order, and on this day we had both the red and medium fatty tuna, which is highly recommended. The fatty sashimi of the tuna was a perfect match! After that, I finally met up with my friend and we decided to stay up late drinking after a long time! It's really precious to have friends with whom you can drink together as much as you did in the past, even after so much time has passed 🥰. National Sake Fair 2025 in Osaka_56 Fukui Prefecture Booth 8 The Yutaka Sake Brewery is located in Sabae City, which feels somewhat familiar to us since Umaiai-san helped them at the Japanese Sake Festival. ◉Kasokandoku Junmai Daiginjo Betsuatsurae The aroma is slightly smoky. It has a sweet and savory taste, with a slight bacon-like flavor. Even without any favoritism, they make a lot of good sake. They seem to be particular about Gohyakumangoku from Fukui Prefecture. The level of sake in Fukui Prefecture is also very high, and there is a lot of good sake here. I forgot to take a picture of this one, so I borrowed it from bouken.

National Sake Fair 2025 part53 Fukui prefecture (7) Yutaka Sake Brewery in Sabae City Mr. Umaisan helped us at the booth of "Hanashoku" at the Japanese Sake Festival before, and Mr. Umaisan brought sparkling sake at the Sakai Off-line Meeting. I was like Mr. Purgatory by calling out "umai" so many times 🔥. Polishing ratio 50% Gohyakumangoku 16% Sake degree -9 3190 yen Beautiful, slightly smoky and smoky. Sake strength -9, but it didn't feel that sweet. The branding label is cool. I wonder if Fukui is strong in Sakahomare and Gohyakumangoku 🤔. I'm pretty sure they used Fukui Gohyaku Mangoku in Hanahayo too.

I was worried about the sake I chose at a supermarket in Sabae, and was surprised to find that it tasted a little different when mixed with ice. I drank it at room temperature with ice, and was surprised at how it tasted differently when mixed with the temperature and melted ice! Delicious 😚! Personally, I like it better when it is chilled to a crisp!

Report 1📝 off-line meeting in Sakai, September 2024 We (Mr. pyonpyon, Mr. bouken, Mr. and Mrs. Yasube, Mr. Ofuji, and myself) were invited to the Sakai branch (Mr. Umaumai, Mr. and Mrs. Wakata, and Mr. Maru), with whom we have strong connections in Kansai branch, and we each brought our own drinks and had very valuable drinks at a certain izakaya 🍶. I was told ⁉️ that I didn't expect such a gathering in Sakai, but I'll go anywhere in Kansai if my schedule allows 🚈💨. We toasted with a sparkling toast from Uma Uma Uma's 🥂. It was my first time to try nigori sparkling, but after the first sizzle, I thought the rice flavor was firm, then I felt sweet and sour like apricot and pulled away. It was more low-alcohol and refreshing than it looked, and I drank it in gulps as I arrived in a sweat 🍾.

Sake is junmai, even better when heated." It's a little cold tonight, and this phrase resonates in my head. So I warmed it up for the first time in a while! Yum! It's delicious!
