It is characterized by its sweet and sour taste.
I had a strong image of lactic acidity from Northwest Brewery,
But this one has almost no lactic acidity,
It has a great greefiness to it.

80% of the long and narrow area is uphill. It's tough 😓.

But it was left at room temperature for 3 months in the summer...
It's not a regular taste, so I'll use it for my record.
It tasted plump and dry!
I had never had much sake from Saitama Prefecture, but I suddenly bought some at a liquor store 🍶.
It was so good that I was surprised I didn't know about it before: ‼️

The lemon acidity is strong and the honey lemon sweetness is present, but the overall taste is refreshing. The carbonation is moderate. Low al 13 degrees. Melts in the mouth? 😋

It was recommended to me by a liquor store that I visit about once a month.
It is made by the same brewer as Sairai, but Sairai and Bunraku Reborn are sold at different stores. It is less sweet than Sairai, but has a refreshing fruity taste with just the right amount of acidity.
When you drink it, it has a citrusy and woody aroma like grapefruit, but it also smells like soda, partly because of its sweet and gassy aroma. There is also a yogurt-like fermentation. The taste was strong sourness and bitterness, a little umami and sweetness, and the mouthfeel was nice, clean, and refreshing. It was an easy drinking and tasty sake of the moment 😁.

I had a drink at the Asahiya Sake Shop stand at Kitazawa Hachiman, which is famous (I think) for its fair stalls with reasonable prices.
