Dry, with a unique flavor that I have never tasted before. The color is like oolong tea, and the character remains the same whether served cold or hot.
It requires a high level of experience to appreciate its depth.
The 10th cup. The last one was a lukewarm cup of Shinigami. It's been a while since I've had anything but cold sake lately as the weather has warmed up. It tasted gentle and was just the perfect drink to end the day.
It is yellow and tastes like old wine. But still quite drinkable. Very unique taste.

The yeast used (Shimane University's HA11) is not so mysterious, but it has enough elements to make a good sake.
It is unfortunate that each assertion drops off sharply as the temperature rises, and the dryness increases sharply.
Anyway, the name does not match the taste.

It's in season right after taking it out of the fridge, and unfortunately it gets -10 points when the temperature rises.
Also, since this yeast is so weird, wouldn't it be better to enhance this one-of-a-kind smell of rising yeast to increase the reaper factor?

It's a sake that is completely unique to each person, but as I drank it, I found myself falling in love with it.
I want to try it hot next time. I am convinced now that it is absolutely delicious.
