After a little while, the flavor is hidden when the sake is brought up to the hiya level. I felt it was tasteless. The owner says that last year's freshly squeezed sake had a pronounced bitterness and other unpleasant tastes, but this year's sake is very tasty!

From the second glass, the bubbles stay in the nigori and accentuate the mellowness. Mellow, lactic sweetness and a hint of acidity. The aftertaste is short and slightly sweet. It was a gentle and mellow sake from start to finish. I thought it would be sweet since it has a Sake meter value of minus 40, but the sweetness was very slight. Unusual pink nigori sake! This year's version seems to be almost sold out already!
