I received a happy news yesterday 😀! Rafa papa is going to deliver freshly made handmade soba noodles today. Kaorin and I both love Soba, so Kaorin was already soaring since yesterday and even started to prepare Tempura so that we can eat it right away 🤣. I was wondering which sake to match with Soba, but I took the liberty of preparing this sake for Rafa papa with the image of Shinshu Soba... Kawanakajima Genmai from Shinshu: 🙆‍♂️ It was delicious! Of course, Rafa papa made the handmade soba noodles for us 😀. Kawanakajima Genmai is still a strong and robust sake, but the soba noodles had a wonderful texture that overwhelmed it 😇. We had it as it was at first, then with salt, and then with tsuyu (sauce), all of which were delicious 😀! We ended the meal with tempura, and it turned out to be the best dinner ever 😀. Today's report was not about the sake, but about the soba 🤣.

Hi Aladdin 😀 The Sake Soba at Shu-shin-kan is served with Morisoba and a glass of Fukuju, which is poured over the soba and then served with dashi broth, but I think you need good soba and strong tasting sake to make it taste right 😀.

The other day I read Rafa papa's post and for the first time in a while I wanted to drink Kawanakajima Genmai 😀. But at the liquor store I often go to, you can't drink Genmai without using points😅. So I activated Rafa papa GPS and went to this liquor store for the first time 😀. I brought home this Kaygetsu with Genshu Mai at that store... I happened to see Kaygetsu Nigori 😇. I had the top clear and nigori for tasting and the chilled version, and they were all almost as good as each other 😀. I could still taste the umami and fruity flavor while it was still chilled, but I could also taste it at room temperature 😇. Tomorrow, the sake god is inviting the sake-no-wa friends for a tour of the sake brewery 😀. I have a GPS so I guess I don't have to go with him ❓🤣.

Kawanakajima Genmai Miyamanishiki Junmai Ginjo Unfiltered Nama-shu Recently, I've been making soba noodles with buckwheat flour from Shinshu on the weekends. Soba noodle making 🍜! Then I want to pair it with a Shinshu sake 😌. I bought... a bottle of Genmai ✌️ It's a very gorgeous sake 😌. Elegant and soft sweetness... Deep acidity... Slight bitterness... Concentrated sweetness fills the mouth The bitter acidity and the bitter taste are beautifully balanced 🤤. The cup goes on and on and on 🤣 I'm looking forward to pairing it with Shinshu soba noodles during the holidays. I'm looking forward to it 😊. I wonder if there will be any left until then... 🙄⁉️ I'm a little worried... 🥺.

Kaygetsu super-harakuchi Tokubetsu Junmai-shu 60 Nama-shu I want to drink dry sake once in a while... So I bought it: ✌️ I drank it out the other day, but it was my first time drinking it at home 🔰. It is very light and dry... I can feel the rich umami of the rice. It is a very tasty food sake 😋. The first day was very pungent and my wife was a little disappointed. Junmai Ginjo Miyamanishiki🌾Unfiltered Nama-shu The first bottle is Shinshu Kamerei 🐢🐢🐢🐢 The second one is Kawanakajima Genmai 🌬️🌳🔥🌋. Then let's compare them... 🙄🙄. Both have an elegant sweetness that spreads at once. The Genmai has a lingering sweetness... The bitter accent calms you down 😌. It's hard to choose one over the other... Kou is from Takeda origin Gentamai 🌬️🌳🔥🌋🌋. I know 😊.

Kawanakajima Junmai Nigori Sake A lively season for nigori reviews: ⛄️ I was very late to the party💦. Finally the first nigori of the season: ✌️ Not the most popular nigori, but the most popular on the high street 👑. What a surprise, more than 60% of the bottle is lees... 😳 This is "THE NIGORI" 🤣! Genshu Mai" is a popular sake from Chikurano... This sake has gained overwhelming local support. In fact, it accounts for 30% of the brewery's shipments. You don't have to drink it now 😅 I'd be a natural to drink it now 😁. From the supernatant... Slight sweetness... Switching from strong acidity to bitterness Both acidity and bitterness have a strong impact 😳 When the lees are mixed, the expression changes completely... The sweetness increases and becomes gentle and round 😊. The mouthfeel is as smooth as it looks. The lees is very silky and refreshing 😌. I heard they carefully strain the mash... The sweetness and umami of the rice can be felt while the lactic acidity cuts through nicely ✨. This is delicious 🤤. Nigori... a good start!

I got it through bartering with Rafa and Banshu Issen🤗. I was told on the group line that Genshu Mai was in stock, but I gave up because I couldn't go buy it this weekend, but Rafa-san bought it for me 🥺. That's the sake god 😍. It has a gorgeous heady aroma. It has a fruity, sweet and bitter taste on the palate. It has a cool sweetness like green apple. It is one of the most robust sweet and tasty Genmai I have ever tasted. I personally prefer it to Jungin Kinmonnishiki. Even after a week, it was still sweet and delicious to the end.

Yukino Kayasha Junmai Ginjo Namaishu This is my first visit to Snow Kayasha! It's a winter limited edition of the regular Junmai Ginjo ⛄. I bought it last week, but when I looked at it closely It was made in December 2022😅 I'm surprised it's still around... I was lucky ✌️ Fresh and refreshing as a new sake 😌. Mild rice flavor and delicate acidity. No cloying taste and easy to drink 😋. This clarity is amazing👍‼️ It is a versatile sake that can be enjoyed with food or on its own!

Once upon a time, I stopped by this liquor store for "Miyoshikiku". This time, Rafapapa told me about the ministry here. I didn't know they had Genmai in the neighborhood. ......Thank you Rafapapa! I'll start with Dewa's first sip! It's like a ripe, ripe grape? I'll drink it at ...... Sweet! It's so sweet, but it has an amazing sharpness that doesn't linger at all! It's so sweet! It is almost at the level of white sugar, and has the feel of Kintaro candy or cotton candy, but in the latter half of the flavor, the taste of sangen sugar comes out for a moment.... The taste of the three hot sugars that appear in the latter half is so sweet that it gives the illusion that it is a sponge cake. However, the sharpness of the taste becomes dull and it clings to the throat a little when it gets up to chilled. The sweetness comes first, overriding the fruit and freshness of the flavor. The umami follows in parallel. But it's not a juice, you know? It has a surprisingly muscular body and is a solid sake. Probably Mariko's favorite guy ...... It just occurred to me that if I were to put it in food, this sake would be used similarly to mirin. So if you really want to put it in food, don't put the real mirin, but put this sake in and then put the white down without putting the real sake in and without putting the red up.

Kawanakajima Genmai Junmai Ginjo Kinmon Nishiki I can't get Shinshu Kamerei these days 😭 I started to drink Genmai instead 🥰. After the Junmai Ginjo Miyamanishiki and the Special Junmai Yamadanishiki, this time it's the Junmai Ginjo Kinmon Nishiki😆. The sweet and juicy taste is typical of Genmai, followed by sourness and bitterness. It's also delicious 🤤.

It's a standard in terms of specs😅 It's okay because it's delicious 🤣 The mouth is filled with a strong sweet taste 🤩. It's a great product to have as a staple 👍👍 I want to make this a regular 👍 I don't know when I can buy it again 🤣
