This is the third year that I have started drinking Tetorigawa Shirojyu. The year before last was so delicious that it was a shock... Last year was a reaction to that impression and was not so memorable, but this year I was able to drink it better than last year! The citrus acidity is refreshing and crisp, and the umami and bitterness are more impressive than the sweetness. I wonder what it is...it is like eating a tangerine with a strong sour taste under a kotatsu (a table over the kotatsu in winter). Sour tangerines have a suppressed sweetness, but I guess it is the same with sake. I was really looking forward to tasting it a few days later when the acidity had gone. The second day tasted like a grapefruit sour with a pleasant (this is an important point) bitterness. The third day was right in the middle of my favorite, and I finished it without thinking. On the contrary, I don't remember. On the 4th day, the bitterness comes forward a bit, but it is still delicious and has a grapefruit sour taste. It was very tasty because it was able to balance the freshness and the intensity of the alcohol! It would be great with fatty foods such as chicken tatsuta or grilled mackerel, or sour foods such as Japanese-style stewed chicken wings with vinegar.

This is my second Omine since I bought a cup of sake some time ago. I had a good impression of this sake because it was so delicious even though it was in a cup, but I had been avoiding it because it is not easy to buy. I heard that this unfiltered raw Yamadanishiki sake was very well received, so I bought it anyway without looking at other sake, lol. I don't know how to describe western Japan's sake, so to use a metaphor from eastern Japan, this fruitiness with hints of apple, muscatel, and white peach is like a sake from Nagano! It has a very rounded and gentle mouthfeel, like a Shinshu Kamerei. In other words, it's really delicious! Daimine is amazing. The freshness, sweetness, umami, and richness like brown sugar make it a monster sake that the more you savor it, the deeper you will get into it. The closest I've had so far is Tenryohai Shiboritate. No wonder it has a big fan base, and I may end up chasing after it. The lightness of the 14.5 degree alcohol content makes it easy to drink without even thinking about it. It has three times the alcohol content of beer, so it's dangerous, dangerous, dangerous!

Storehouse Review 86 It has been a long time since I have had Ryoseki Shuzo. I like the Suitama Nama and have had it a few times. Personally, I remember that I preferred the special junmai because I prefer a less strong aroma. I bought and drank Hanayu several times in a bottle, with different rice varieties. This time, I hadn't had Hana Yuu for 3-4 years since then! It's also a No. 4 bottle! (It seems they only release it in July). The aroma is surprisingly not strong, but it has a classy floral aroma. When you drink it, you will immediately recognize ...... that it is a sake from the Tohoku region, with hints of apple and pineapple. Sake like Mutsu Hassen and Hakuro Suiju, including Jyushiyo, have this kind of aroma. Personally, I have been going through a transition of liking the aroma, disliking it, not liking it, and then finding it not so bad. I think that sake with this kind of aroma tends to have a pungent and bitter aftertaste, but if you know what you're getting into, I think it's a good thing too. Although it is sweet, it has an elegant sweetness, so you will not get tired of drinking it. I think it is a sake that goes well by itself mainly before or after a meal, but also with appetizers or during a meal if the flavor is not too strong.
