It is a local sake from Saitama, but this is my first time to taste this brand.
It's delicious!
Perhaps it is because of the 90% milled rice ratio, but the main flavor is the miscellaneous taste of the rice, which is combined with a very light feeling. The rice flavor is also present in the background, so it is not just light 👍.
I prefer sweet and umami type of sake, but recently I experienced a sake that combines spiciness, astringency, acidity, and bitterness very well, and I'm starting to like this line of sake as well 😅.
I had it chilled.
The aroma I got from the bottle is as follows.
Aroma: Slightly old sake-like aroma
-Aroma: Sourness and astringency that goes into the nose.
Taste sensation
The higher the number, the stronger the taste (5 is the maximum)
-Spiciness: 3 at the beginning → 2 in the aftertaste
-Sweetness: 0 at the beginning → 0 in the aftertaste
-Sourness: 0 at the beginning → 0 in the aftertaste
-Bitterness: 1 at the beginning → 1 lingering aftertaste
-Astringency: Start 2→ Lingering 2
-Rice flavor: 1 at the beginning → 1 lingering aftertaste

Even though it is unfiltered sake, it has a brown sugar aroma like an old sake. It is not heavy, but has a strong sense of rice flavor, and has a presence even though it is light. Even though it is a sumo wrestler! The label is a little bit soothing 🥰, but it's not! The label is a little bit healing 🥰, but it's still a great sake!
