<Gently aged sake with plumpness, acidity, sweetness and umami. The name "Fushou-ou" is very cool. "You go on ahead." "What can a mere old man do? "Geez. "I can't let myself fall here! And so on. The aroma is matured, mainly lactic acid, with burnt nuts, honey and rice flowers. There is no sense of aging (twisting), and even though it is very aged, it is very lively. In the mouth, the acidity is plump. It is not a youthful sourness, but the mischievousness and mischievousness of an old man. You can also feel the gentle sweetness. From the middle part of the beer, the sourness remains, but the flavor spreads quickly. <Refreshingly clean, sour, sweet, bitter alcohol. This sake is the result of a collaboration between Okuda Sake Brewery in Akita, which brews Chiyoroku, and Motox, a trading company specializing in wine and other alcoholic beverages. I'm not really good at dry sake, but it was recommended to me, and the label was nice. The aroma is slightly refreshing, sweet and sour alcohol. Even though it's alcoholic, there's nothing unpleasant about it at all, and combined with the faint acidity, it blows through pleasantly. Yummy! When you put it in your mouth, you'll find a refreshing, mild sweetness, sourness, and bitterness like sweet summer. It's fresh, fresh and pleasant! From the middle part of the bottle, a beautiful bitterness spreads out, and a sweet, sour, bitter, and alcoholic aroma goes through the nose, and that makes me happy. <I'll be back. to a soft and gentle landing. This is a slightly unusual work. It's a PB from Morishita Sakenoten, a liquor store that also has a store at Ise Jingu. The aroma has a slight sweetness of rice and a sourness of lactic acid. On the palate, it is mellowly sour-sweet with a strong umami flavor. From there, it changes to a full and gentle taste. It also has a slight aged taste. The lady at the shop said it was also good on the rocks. It certainly sounds good. But for me, it's better at room temperature. And when I had it heated to human skin, the sweetness and umami opened up. I have deep pockets. It's not Ghibli, but it's like Yamato Takeru from Yuuki Masami's "The Adventures of Yamato Takeru". Yes. I'm pulled in by the origin of the sake. I think "The Adventures of Yamato Takeru" is pretty minor. It's a short story in a single book from the beginning. <"Clean aging, mystery sake. This is a mysterious sake from the Higashiyama Sake Brewery in Fushimi, Kyoto. Even if you search for this, you won't find any information at all. It's rare to find nothing at all so far. It may not even be a regular limited edition, but a small amount of aged sake that happened to come out and they tried to sell it. The aroma is sweetness of honey, soft sourness, and caramel with a hint of aging. When you put it in your mouth, the aged sourness and sweetness go boom! The flavor is also there! There is a lot of flavor. But in the second half, the taste recedes quickly and is cut cleanly. It's delicious! If I were to compare it to Ghibli, I'd say it's like the old man Pom from "Laputa: Castle in the Sky". He is firm but has a gentle way of aging. This sake was aged for 5 years at 3 degrees Celsius, just as Grandpa Pom spent years in a mine without sunlight in search of flying stones. When Grandpa Pom was confronted with the crystal of the flying stone that he had sought for decades, he almost gave in to his desire for a moment. But he properly overcame it. It is delicious. It's not Ghibli, but if I were to use an analogy, I'd say it's like Takewakamaru, the main character in "Awamino Umi: When the Surface of the Water Sways. This is the childhood of the future warlord Kutsuki Mototsuna. Well, most of you probably don't know that. It's a story about a weak lord of Omi Takashima, where this sake brewery is located, and his rise to power in the Warring States period. <Gentle, clean, umami acidity. This is a sake from Hakurei Shuzo, which I enjoyed drinking Hakurei vivid before. They say it's called "Hyotan karakoma" because they made an unexpectedly good sake by using uncommon rice. Interesting! The aroma is a beautiful lactic acid. It has a gentle sourness on the palate, and it comes in slowly. There is almost no sweetness. The sourness recedes quickly, and the rice flavor comes out from behind it. In the end, it disappears softly and is refreshing. The alcohol content is low at 14%. I wonder if this is the reason for its gentleness. But it is not lacking. Even though it's mainly sour, it's not harsh, and it's not sweet, but it's gentle. It was delicious! It went really well with the marinated firefly squid with short pasta. The flavor of the firefly squid, the thickness of the olive oil, and the sourness of the marinade complemented the mild sourness of the sake. <Fresh herbs with low alcohol content I had heard that a part-timer at a store I frequent was celebrating his 20th birthday, so I rushed over with a bottle of alcohol as a birthday present. The first time in his life? It's the first sake he'll drink in his life, and we want him to have a good image of it. After much deliberation at the liquor store, I chose this low-alcohol sake from Mimuro Sugi. And as expected of a girl who works part-time at a pub, she served it to all the customers on the spot. The aroma is of fresh herbs and ramune. In the mouth, it has a fresh, juicy sweetness, a soft umami taste, and a beautiful acidity. 13 degrees is low alcohol, so it's light, but the taste is strong. <Beautiful, dry Hououmita. Hououmida is a mellow, sweet and fruity sake. However, this sword is a dry sake. This is the first time for me to drink this kind of sake. The aroma is beautiful and the alcohol is delicious. The taste is refreshing with a slight sweetness and acidity. However, it quickly recedes and the umami flavor sizzles. The aroma of the umami alcohol accumulates in the front of the mouth and continues into the aftertaste. From the name, I imagined it to be sharp and crisp, but it's more of a slow drink than I expected. If I were to compare it to Ghibli, it would be Goemon from "Cagliostro's Castle". The "Aizu Ryugasawa Super Dry" I drank the other day had a crisp feeling and I compared it to Zantetsuken, but this time it has a bursting umami, so it is Goemon. <The sweetness opens up as it warms up. I drank this last year at the Panda Festival and it was so good, I'm repeating it. And on this day, I had this one heated up. Ever since I drank Ryoseki FLAME OF SKULL last year, I've been addicted to heating up this kind of sweet sake. First of all, with cold sake, it has an understated but ecstatic sweet alcohol aroma. When you put it in your mouth, you get a fruity sweet and sour alcohol aroma. It's still so delicious. And when you raise the temperature, the flavors open up vividly and become even more bewildering. This is happiness. When the temperature goes down, it becomes gentler, which is also delicious. <The sourness and the semedyne feeling are crunchy. From the initial aroma, there is already a strong Semedyne feeling. It feels like an unfiltered undiluted sake. It is very strong. Some people may be surprised to find semedyne in sake, but unfiltered undiluted sake sometimes has this kind of aroma. The cause of this is a substance called ethyl acetate, which is also found in ripe bananas and melons. Of course, this is also the smell of semedyne. It's really strange that such an aroma can come from just rice and water, isn't it? The taste is mainly sour, with only a little sweetness at first. It is fresh, sharp and dry. <Sweetness, umami, bitterness, like a peaceful spring night. For the glass, I chose a tin cup with gold leaf on the inside to match the name "Gekko". You will be excited even before you drink it. The aroma is slightly sweet, umami, bitter and fruity. Oh, it's a very Koechiku-like aroma. When you put it in your mouth, it starts with a slight sourness, and then the sweetness, umami, and bitterness are just as you expected from the aroma, like a calm spring night. From the middle of the palate, the taste recedes quickly, and a little umami comes back in the aftertaste. It's not overpowering, but it has a great presence. I thought it was probably just a plain dry sake from a long time ago. But when I had a chance to taste it, I was surprised to find that it was more than just normal. I was surprised at how delicious it was. I didn't want to just taste it, I wanted to drink it properly, so I ordered it again. The aroma is mild and clean with a good balance of alcohol, acidity and sweetness. It has a smooth acidity and a mildly sweet flavor. It is a fine, clean and dry sake. But then, a deep and rich umami comes bursting out. Even though the flavor is so strong, the taste is still beautiful and it breaks off easily. In Ghibli's "Nausicaa of the Valley of the Wind", it is like the battle in the ship of Pejite which was attacked by Turkmenistan. The basic idea is dry. <Gentle citrus acid sweet clean The aroma is modestly apple and citrus sweet and sour. When you put it in your mouth, the sourness comes out first before the sweetness. You can certainly feel a lot of sugar, but the acidity is much stronger than that, so it is not sweet at all. It is clean and refreshing. If I hadn't been told, I wouldn't have thought it had a sake content of minus 20. The specifications are sake degree minus 20, acidity 2.6, amino acidity 0.5, and alcohol content in the 13% range (the label says 14%). This sweetness is due to the 4-stage brewing process. And the acidity is also high here. I can feel the sourness of citrus because it is made entirely from white koji. But even though the acidity is so high, it is round and does not stick to you. Also, the amino acidity is very low. I've never had it this low before. It's certainly clean and refreshing. A hint of sourness and bitterness spreads in the mouth, and the aftertaste is also bitter. This is a type of sake I've never had before. When I asked about it, I found out that it has a sake degree of ±0 and an acidity of 2.4, which is a little sweet and very sour. <Sour, Umami, Hot and Sweet Kanzake We started with a hot sake. It has a wonderful aroma of warmed alcohol that I can't get enough of. When I sipped it, I could taste the sourness of lactic acid with a moderate sweetness and umami. There's also a hint of fragrance that wafts up to the nose from the beginning. This is a happy warmed sake. When it cools down to just under the skin, a pleasant bitterness is added, which is also good. It's delicious at a variety of temperatures. Finally, I finished it off by heating it up again. It's delicious at any temperature, but I prefer it heated to bring out the sweetness. If I were to compare it to Ghibli, I'd say it's like Piccolo's father in "The Red Pig". No matter what age he is, he seems to be having fun and doing a good job. When he was young, he was in the early days of airplanes and passionately devoted to the new dream of flying.
