To be honest, I underestimated it.
Kubota is a representative of Niigata. I thought it was probably just a plain dry sake from a long time ago. But when I had a chance to taste it, I was surprised to find that it was more than just normal. I was surprised at how delicious it was. I didn't want to just taste it, I wanted to drink it properly, so I ordered it again.
The aroma is mild and clean with a good balance of alcohol, acidity and sweetness.
It has a smooth acidity and a mildly sweet flavor. It is a fine, clean and dry sake. But then, a deep and rich umami comes bursting out. Even though the flavor is so strong, the taste is still beautiful and it breaks off easily.
In Ghibli's "Nausicaa of the Valley of the Wind", it is like the battle in the ship of Pejite which was attacked by Turkmenistan. The basic idea is dry. The people of Pejite are cornered by the soldiers of Turmekia, and they are determined. But that's where Master Yupa's sword skills come into play.
