When you put it in your mouth, a refreshing citrus sourness spreads. A moment later, the sweetness comes through as well. It seems to have a lot of sugar, but there is a sourness in the center. From the middle part, there is a pleasant bitterness. A hint of sourness and bitterness spreads in the mouth, and the aftertaste is also bitter.
This is a type of sake I've never had before. When I asked about it, I found out that it has a sake degree of ±0 and an acidity of 2.4, which is a little sweet and very sour.
I thought it was because it was citrusy, but when I asked about it, I was told that they use white koji.
If I were to compare it to Ghibli, I'd say it's like Arrietty from "Arrietty the Borrower". She's beautiful, young, adventurous, and refreshing. It's cool that she puts together her paper in a "borrowed" style. Her bitterness at her own failures is also very strong.
By the way, speaking of Arrietty, I'm curious about the washcloths she uses to tie her hair up. I wonder if the hair doesn't get caught in the gaps? It looks like it would hurt like hell if it got caught.
