<Sour, Umami, Hot and Sweet Kanzake
We started with a hot sake. It has a wonderful aroma of warmed alcohol that I can't get enough of.
When I sipped it, I could taste the sourness of lactic acid with a moderate sweetness and umami. There's also a hint of fragrance that wafts up to the nose from the beginning. This is a happy warmed sake.
When it cools down to just under the skin, a pleasant bitterness is added, which is also good. It's delicious at a variety of temperatures. Finally, I finished it off by heating it up again.
It's delicious at any temperature, but I prefer it heated to bring out the sweetness.
If I were to compare it to Ghibli, I'd say it's like Piccolo's father in "The Red Pig". No matter what age he is, he seems to be having fun and doing a good job. When he was young, he was in the early days of airplanes and passionately devoted to the new dream of flying. In his old age, he seems to have gained confidence in his skills and is competing with the rest of the world. I think it was around this time that he built Porco's amphibian. And even after he got old and left Fio in charge, he seems to be continuing development as a hobby and creating great things in a humble way. As an engineer, I fantasize and admire him without permission.
