<Sweetness, umami, bitterness, like a peaceful spring night.
For the glass, I chose a tin cup with gold leaf on the inside to match the name "Gekko". You will be excited even before you drink it.
The aroma is slightly sweet, umami, bitter and fruity. Oh, it's a very Koechiku-like aroma.
When you put it in your mouth, it starts with a slight sourness, and then the sweetness, umami, and bitterness are just as you expected from the aroma, like a calm spring night. From the middle of the palate, the taste recedes quickly, and a little umami comes back in the aftertaste. It's not overpowering, but it has a great presence. It attracts the eye like the moon in a clear night sky and does not let you feel any miscellaneous taste. Delicious.
It was great with smoked cheese.
If I were to use a Ghibli analogy, it would be the giant moon in the scene in "The Tale of Princess Kaguya" where Princess Kaguya is running fast while taking off her kimono. The colors are the pale tones of a watercolor painting, but they have a very large presence.
