＜Gentle citrus acid sweet clean
The aroma is modestly apple and citrus sweet and sour.
When you put it in your mouth, the sourness comes out first before the sweetness. You can certainly feel a lot of sugar, but the acidity is much stronger than that, so it is not sweet at all. It is clean and refreshing. If I hadn't been told, I wouldn't have thought it had a sake content of minus 20.
The specifications are sake degree minus 20, acidity 2.6, amino acidity 0.5, and alcohol content in the 13% range (the label says 14%).
This sweetness is due to the 4-stage brewing process. And the acidity is also high here. I can feel the sourness of citrus because it is made entirely from white koji. But even though the acidity is so high, it is round and does not stick to you.
Also, the amino acidity is very low. I've never had it this low before. It's certainly clean and refreshing.
If you compare it to Ghibli, it is like the sunset sky in the last scene of "From Up on Poppy Hill". It's a beautiful sky that reflects a clear, refreshing, sweet and happy feeling.
